When I made it in the restaurants I was a chef in, you can use just plain American beer, or even de-alcholoized beer, they sell a blonde ale or if you have a liquor oultet near you that sells single bottles. Try an English beer like Bass or Worthingtons, a combination of old cheddar and a touch of parmesan.

Grate the cheese, and then add the dry mustard, cayenne, worchestershire, touch of garlic, put it in a pot add the beer, slowly melt it, do not boil it.

I like it on toast, or english muffins, welsh roebuck is the rarebit over toast with a fried egg.

You can use Milk.

INGREDIENTS
4 tablespoons butter
1/2 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon dry mustard
1/8 teaspoon cayenne pepper
2 cups milk
1 teaspoon Worcestershire sauce
2 cups shredded sharp Cheddar cheese
DIRECTIONS
In a 2 quart saucepan over low heat, melt the butter. Stir in and blend the flour, salt, mustard and pepper. Stir in the milk and Worcestershire sauce. Continue stirring the mixture for 10 minutes, or until thickened.
Stirring continuously, melt the cheese into the mixture and blend well. Serve immediately over warm toast.

You can and it is delicious:

WELSH RABBIT WITH BEER (RAREBIT)


4 slices White or rye bread
1 lb American cheese
3/4 c Beer
1 tsp Dry mustard
1/2 tsp Worcestershire
1/4 tsp Salt

1. Toast bread slices in electric toaster or under broiler and keep warm until required.

2. With shredder or knife, coarsely shred or cut the cheese into slivers.

3. In 2-quart saucepan, over low heat, or chafing dish over boiling water, mix cheese with beer.

4. Add mustard, worcestershire and salt; cook, stirring until the mixture is smooth.

5. Pour the hot cheese mixture over the warm toast and serve at once.

No, but it sounds like a good idea. I make a cheese dip with beer and it tastes great.
