This one is very easy i cook it all the time.
Spanish Rice
1 ½ tsp Olive Oil
Chorizo
1 cup long grain white rice
2 cups water
3-4 Tblsp Tomato Salsa (I use Ortega – Thick & Chunky – Medium)
Goya Sazon Seasoning with Achiote
Salt
¼ to ½ bag Niblets Corn
In medium sauce pan put oil and about one square inch section of chorizo on medium heat until chorizo melts and starts to brown. Add the salsa stir for a few seconds then add the rice and water. Add about 1/3 packet Sazon and salt to taste (usually about 1 tsp.) then add the corn. Stir well. Bring to boil and allow to boil until you can see the rice grains under the water. Cover turn heat down to low and allow to cook undisturbed til rice is tender. About 20 min. Before serving fluff rice with a large spoon.

Heat the oil and the green pepper and onions. Add the rice and brown it. I usually get the pan to 300 in order to saute the veggies and brown the rice. At this point I add the garlic, salt and pepper smash the boullion cube in the pan or if you buy the powder kind just sprinkle it . Once the rice is brown add the hot water to cover the rice. Once you add the water, add a little bit of tomato sauce and some cumin. taste the water, it should be tasty if not just add a little more spices. Once you add the water reduce the heat a little (don't stir the mixture once you add the water because it will become clumpy if you do.) If the water starts to dry up before the rice is completed cooked, just add a little more hot water . Then cover the pan and let it simmer the last 5-10 minutes so that the water can be absorbed. It will take a few tries before you get it right. I like to add sweet corn either frozen or from a can (I add it when I add the water the 1st time.) Sorry I cant give you exact measurements on the ingredients but I never measure. It should be ready in 20-30 minutes. I am Hispanic and learned how to make this rice from my sister in law and they owned a Mexican restaraunt

Authentic Spanish Rice
Serves 4
Ingredients:
3 tablespoons vegetable oil
6 slices streaky bacon, chopped
1 x 5 lb. chicken, cut into serving pieces
6 tablespoons seasoned flour
2 onions, chopped
I garlic clove, crushed
14 oz. canned peeled tomatoes
3 oz. canned pimientos, drained
2 teaspoons paprika
I/4 teaspoon ground saffron
1 teaspoon salt
1 pint [2 1/2 cups] water
8 oz. [1 1/3 cups] long-grain rice,washed, soaked in cold water for 30 minutes and drained
6 oz. frozen peas, thawed
Preparation:
In a flameproof casserole (cazuela), heat the oil over moderate heat. Add the bacon and fry until crisp. Transfer the bacon to kitchen paper towels to drain.
Coat the chicken pieces in the flour, and add to the casserole. Place over moderate heat and fry on all sides until the pieces are golden. Remove the pieces from the casserole and set aside.
Preheat the oven to moderate 350 F (Gas Mark 4, 180 C).
Drain off most of the oil from the casserole. Add the onions and garlic and fry over moderate heat for 5 minutes.
Place the chicken over the onions and add the tomatoes, with the can juice, the pimientos, paprika, saffron, salt and water. Bring to the boil. Stir in the rice.
Cover the casserole and place in the oven to cook for 35 minutes.
Add the peas and bacon and cook for a further 15 minutes or until the chicken is tender. Serve at once.

Spanish Rice
Ingredients
3 cups cooked rice
1 large onion, chopped
4 stalks celery, diced
1 large bell pepper, chopped
2 cloves garlic, minced
1 tablespoon vegetable oil
1 teaspoon chili powder
1 teaspoon cumin
1 cup chopped tomatoes
coarse salt
1/2 teaspoon oregano
freshly ground black pepper
1/2 cup grated Monterey jack cheese
Method
Sauté onion, celery, pepper, and garlic in oil. Add chili powder and cumin. When fragrant, add tomatoes, salt, oregano, and pepper. When tomatoes are cooked through, stir in the rice
Top with the grated cheese and bake long enough to melt the cheese

uh just look at the reciep on the bag. a friend told me that spanish rice with bananas is good.
