It is possible he is having hypoglycemia, and then rebounding, so his blood sugar appears in the normal range by the time he arrives at the doctor.

The key is to buy a home glucose monitor, and test him when this happens, right away. Treatment for hypoglycemia, provided there is no other treatable cause, is frequent and small meals, and avoiding simple sugars and simple carbs. Adding extra protein to the diet also helps.

There are other things, such as neurological disorders (i.e. epilepsy), that he should be tested for. Please work with your doctor and watch him closely. In general, it sounds like it's more in this direction. It would be very uncommon for a child to have simple "reactive" hypoglycemia presenting with seizures, although it can happen.

In a very small amount of cases...but more likely a person w/ really low blood sugar will go into a "Diabetic coma" or simply pass out. The later might sound like a "no problem", but IS in fact life threatening.

Yes, I've had a seizure before due to low blood sugar. I agree that you need to buy a kit for yourself if you believe it is a problem.
