In theory, people with Type 1 diabetes can eat anything they want.
However, I have to point out that organ meats can be VERY high in saturated fat and cholesterol, which is unhealthy for everyone, especially diabetics. If you are going to eat them anyway, do it VERY RARELY.
If you already have heart disease, kidney damage, are overweight (Type 1's can gain weight too!), or are in very poor control, then you should not be eating a high animal protein/fat based diet period. This can exacerbate and increase the risk for further problems.

Personally, I agree with the other two comments and would never eat offal myself.
Depending on how much protein you eat, it can make a difference to your diabetes (many people do not realise protein effects how the carbs are absorbed, thus, making a difference). But otherwise, offal is the same as any other meat regarding diabetes.

I am writing to tell you what an incredible impact these methods had on my life! I have had type 2 diabetes for 27 years. I started Nature's Variety pre-made raw frozen diet and LOVE it. They sell it at my local pet food store (locally owned and operated). I can't believe how little my dog poops now. It's unreal. The biggest pain is when we travel, it doesn't work well. I just ran out, so I'll probably continue it mixed with a little dry food.

Gross...non diabetics should eat them either. They are like filters of the body they are from. Yuk.....
Liver-filters toxins
Kindneys excrete urine (toxins)
Heart -recycles your blood...
It is like chewing on the charcol filters from a fish tank (yum)
