As another Yahoo! Answers member wrote, and I second, the *Morningstar Farms* meatless veggie crumble product is great for Chili!!! Of course there are MANY variations of "Chili", and the word itself carries different meanings. I'm talking about what my mother made for us while growing up in the mid-atlantic region of the USA. It's known as "Chili con Carne"....loosely translated....."Chili with meat". Here's a quick and I think, tasty recipe for the Vegetarian alternative for this:
1 Bag Morningstar Farms Veggie "meat" Crumbles
1 15.5 oz. Can Red Kidney Beans with the juice
1 15.5 oz. Can Pinto Beans with juice
1 15.5 oz. Can crushed Tomatoes
1 Packet Chili seasoning mix (French's and Mc Cormick have nice flavored mixes of differing levels of heat)
It's so easy to put together. Just put the "meat" crumbles in a dutch oven and heat/brown them a bit(Like 2-3 minutes on med-high heat) with canola oil (don't overdue this, they're already cooked and ready to go really). Then pour in the rest of the ingredients and the whole packet of chili seasoning. Make sure to get the chili seasoning to dissolve and mix up well. Bring it to a boil/bubble, then reduce to low simmer for (1) hour (longer to get the flavors to mingle more). Voila, Chili con carne for vegetarians. It may not be satisfactory for Vegans, but I'm sure if you did your research you could come up with a recipe very close to this and acceptable for Vegans.
Hope you try It!!! I just made it this passed weekend and I really like it (with some cornbread). I should mention that I'm a pesca-lacto-ouvo Vegetarian, which means that I still eat Eggs, Milk or Dairy Products, and Fish. So, some may argue that I'm not really a vegetarian, but Veggies, Fruit, Legumes, Grains, and then the aformentioned other foods, in that order, are included in my diet.

Here goes, Lots of good ones:
Cheese Starata
Stale bread (French Bread is good can be any kind) cubed
spread bread in oven proof baking dish
IN blender mix 1 egg, a fist size chunk of cheese cut into smaller cubes, 1/4 stick butter, cup 1% milk. blend and pour on bread. If not covered add enough milk to cover then leave for 8 hours or overnight in fridge.
Bake @ 350 degrees for 45 minutes. Remove from oven and serve warm. Its a rich, fluffy dish that goes well with most any vegetable side but my favorite is broiled tomatoes.
roasted tomatoes
slice tomatoes 1/2 inch thick and place side by side in baking pan, sprinkle with olive oil and oregano. bake at 450 for 15 minutes. also good with butter and bread crumb crust on the top. Add that in the last 5 minutes of cooking.
Combination root vegetables like Onions, Carrots, Parsnips, potatoes are good coated in olive oil and roasted. serve with cheese and bread.
pasta Prima Vera the easy way, Jar Alfredo mix combined with package mixed Italian vegetables. Cook vegetables then mix with sauce and serve on any pasta you like.

I make this potato cassarole. It's fantastic: Ingredients are as follow: 24 oz. frozen hashbrown cubes (thawed), 16oz sour cream, 2 c. shredded cheese, 1 can cream of mushroom(or anything you like), 1 small onion, 2 tbs butter, 1 c. cornflakes
To Prepare: Turn (lightly mix) hashbrowns, sourcream, cheese, cream of mushroom, onion in bowl. Put in 13x9 glass or metal pan. Crush cornflakes and sprinkle over top. Melt butter and pour over cass. Bake at 350 for 1 to 1 1/4 hrs or until golden and bubbly.
It's the greatest recipie.

i just call this mmmmmm dish...shallot onions,mushrooms,snap green peas,cubed potatoes,courgettes,olives,cherry tomatoes peppers (you can use your own various combinations) feta or halloumi cheese,then either sliced veggie sausage or quorn pieces.....boil potatoes,shallots,courgettes and peas in water until soft but not so they break up just for about 10 Min's,drain and put them in large oven proof dish add rest of ingredients chopping cheese into cubes pour a little soy sauce over bake in oven on medium heat for about 30/45 Min's stir occasionally ...have it on its own or with salad when you have finished sit back and say ,mmmmmmmmmm ...enjoy
