i have received some great cocktail party ideas but i need simple foods that can sit outside in the arizona heat for a couple hours at night.

hmmm... i don't think that those meat, seafood and dairy options will be too good out in the heat.

you can make a few different salsas for variety
black bean, corn and red pepper
tomato, garlic and onion
mango, onion and chile

a platter of olives, pesto and roasted vegetables with crusty bread

hummus, babaganoush, falafel, tabuleh - look up middle eastern, mediterranean and mexican appetizers and cuisine for more ideas. hot climate= lots of room temp. foods.

spiced nuts.

you can also keep dips and meats chilled by putting them in bowl and then setting those bowls in pans of ice.

Food isnt good if it sits in the heat for longer than 1 hour.

I had a cocktail party in the Summer where the evening heat was 85 degrees......no sign of getting any cooler and these recipes worked great (I did an International theme)
