A Turkish Dish- Imam Bayildi- name from a muslim holy man.It is said he had swooned with pleasure after eating this dish.
Serves 6-
3 large eggplants
3 large onions
3/4 lb tomatoes
1clove garlic
1/2 tsp cinnamon
1 tsp sugar
1tbsp parsley
2tbsp chopped pinenuts
Cut ends off eggplants cover with boiling water, cook for 10 minutes, drain, plunge into cold water for 5 min. cut lengthwise scoop out flesh leaving 1/2 in. thick shell. Put shells in a buttered ovenproof dish, sprinkle with salt &pepper. Pour 4 tsp of olive oil in each, bake ar 350 for 30 min. While baking
Peel & chop onions, skin & chop tomatoes. Peel & crush garlic. Heat 2 tbsp of oil in a frying pan add onions & garlic for 5 min. then add toms,cinnamon,sugar & parsley, reduce mixture by 1/2, chop eggplant flesh & add to pan with chopped pinenuts Remove shells from oven, stuff with mixture & serve hot or cold.
A Nice Hor-d'oeuvre Serves 4
1 larg cuc
salt & pepper
1/4 lb button mushrooms
3 tbls butter
1 tsp flour
5 tbls stock
5 tbls cream
soy sauce
1/4 lb peeled cooked shrimp
wash unpeeled cuc, cut into 1/2 in pieces, cok 4 min in salted water, rinse & drain thoroughly. Cut mushrooms into 1/4 in. slices. Melt butter & cook mushrooms for 3 min. add cucs cover & simmer 3 min. over low heat. Sprinkle in flour & blend in gradually adding stock & cream, bring to a boil add salt, pepper & soy sauce simmer for 3 min. stir in shrimp. heat through. Serve with brown bread or toast. Beebs, you have my sympathies. There are thousands of ways to get by without meat.
I just read one where they use a third cup of p-nut butter and a cup of silken tofu and a dot of lime juice with 4 teaspoons of honey for a spread.
You can use that with crackers or put it on celery with some broiled firm tofu and mushroom kabobs. I love to use Jasmine rice, the aroma is just heavenly and pair that with practically anything. Beebs idea of curry is fab also. Umeboshi plum paste used with a firm tofu and veggies is nice with a side of fried rice.
Oh just check out the Veggie Epicurean web sites and there are millions of things to eat out there that have nothing to do with meat.
I love being a vegetarian and trying all kinds of new food. Vegetable pot pie is another of our favorites. I will confess though that even as a vegetarian I still ate some fish from time to time. My best friend's husband was a fisherman and when he brought home lobster, well, what can I say. It's my weakness. But I love tofu and I happily raised my twins to enjoy it as well and at 23 they still love it.
I often used the soft tofu to mix with my fruit and yogurt in the morning adding a pinch of Silk milk and honey for a smoothie. And you can use any kind of fresh fruit. Blueberries are particularly healthful and high in anti-oxidants. Good luck and have fun.

I'm not a vegetarian, but have an awesome recipe that I tried one night when I hadn't gone grocery shopping yet. :) It consists of the following:
4 lg. portabella mushroom caps (stems removed)
2 Tbsp. olive oil
salt/pepper to taste
1 tsp. garlic powder or 1 minced garlic clove
1 jar roasted red peppers
1 4oz. pkg. gorgonzolla (sp?) cheese
1/2 box plain cous cous
Brush the mushroom caps with 1 Tbsp. of the olive oil and sprinkle with salt and pepper, and broil them stem side up on a baking sheet for 5 mins, turn and broil 2 more mins. Set aside. Cook the cous cous according to the directions, set aside. Dice up 2 or 3 of the roasted red peppers and the garlic and saute in the other 1Tbsp. of olive oil for 2 mins or so. Stir in the peppers/garlic and half a pkg. of gorgonzolla cheese into the cous cous. Place the mushroom caps on a serving plate and scoop a large portion of the cous cous mixture on top of each mushroom cap.
It's quick and REALLY good!

I made this the other night and it was so good! I was copying my favorite Mexican restaurant dish, pollo loco. I guess this could be called "tofu loco".
Make some brown rice. I used enough for 4 servings. Add a can of diced tomatoes with the juice in place of about a cup of the water. (I used instant rice)
In olive oil, stir fry these ingredients: 1 sliced yellow onion, 1 sliced green pepper, handful of Chinese pea pods, half a block of extra firm tofu, diced.
I salted the veggies a bit while cooking then sprinkled mozzarella on them when they were done. Put on top of the rice and Yummy!
You could use any combo of veggies really, the restaurant dish only used onion and green pepper. I thought the pea pods were awesome. I bet broccoli would be too. :o)
PS...I just remembered baked potatoes. You can top them with cottage cheese which is my all-time favorite. Or you could top them with cottage cheese and salsa. Or caramelized onions and cottage cheese.

There is a great cookbook at Borders call Vegetarian Cooking. It was on sale when I got it and it has lots of recipes for all sort so dishes.
An easy one to make is spinach manicotti. Get the big penne noodles and cook them. Then stuff them with spinach and ricotta cheese. Put them in a pan and cover them with marinara sauce and bake it in the over. It is to die for. It goes great with a nice tossed salad and some homemade bread. Check the back of the noodle bag for cook times. Enjoy!

In your transistion, find meat analogs (which almost are not that healthy) to replace portions where you use to use meat. For example hamburgers, purchase Gardenburger, Boca, Morningstar patties and fix your hamburger the same as usual just replace those patties for the meat. Morningstar produce a line of other stuff, fake bacon, fake sausage patties & linkettes. Gardenburger has fake pork riblets & sausage link (full size).
Spaghetti chop those patties into your spaghetti sauce or form into meatball style. As you experience with these products learn how to make your own. There are various books and on-line resources to get recipes from. Try stuff on your own, tofu mixed with oatmeal make nice patties.

Well, I am a vegetarian with food allergies (wheat, flour, soy, eggs, dairy, tomato, avacado, peanut) so I have to be REALLY creative. Consider yourself lucky! Try cous cous, quinoa pilaf, rice pilaf, curried veggies, veggie kababs, kolrabi, mochi, millet salad, tabouleh, mac and cheese, green peppers stuffed with rice, veggie soup, fried mushrooms, okra, cream of brocolli soup, cream of mushroom soup, my goodness I could go on for ever. Try having to do without bread, cookies, cakes, crackers, etc. Wheat is in EVERYTHING including the fake meat substitutes.

Peanut butter & jelly, burritos (refried beans, rice, cheese if you eat it, etc.), fajitas (sometimes with sliced grilled mushrooms), veggie chili (over rice, potatoes, or just in a bowl), veggie stir fry, vegetable curry, vegetable sushi, omelettes, pasta primavera...

Not being vegan, if you eat eggs, explore pasta dishes.
Mushrooms are great with pasta. Mushroom ravioli are my favorite with a spicy marinara or a mushroom sauce.
Spinach pasta is also a favorite with marinara.
Eggs and roasted veggies are great with toast
I love my roasted red pepper omelette!
