To preserve the beneficial enzymes in vegetables, its best to eat them raw. Heating over 107 degrees destroys the enzymes, and many of the vitamins. I juice raw carrots, celery, parsely, cucumber, swiss chard, and pears twice a day, and I enjoy super digestive health for it. If I miss a day, I notice a change in my bowel habits. Lightly steaming vegetables is the next best method, or dehydrating them in a food dehydrator. Serving frozen veggies, enriched with vitamins is iffy-most vitamins in "enriched" food comes from animal sources
