How do you write japanese cuisine in japanese?

I agree with oncoshis. There are two ways to refer Japanese cuisine. And Japanese say "washotku" more often then the second one.

和食 - wa shot ku
日本料理 - nihon ryou ri

andrew`s answer is the most appropriate. The first two characters (nihon) signify Japan the second symbol (no) written in the phonetic script hiragana is a particle used to express possession and the last two characters (ryori) signify food or cuisine.
