In the USA, "scampi" is often the menu name for shrimp in Italian-American cuisine. "Scampi" by itself is also the name of a dish of shrimp served in garlic butter and dry white wine. The word "scampi" is often construed as that style of preparation, not an ingredient, hence the seemingly redundant "shrimp scampi" or the seemingly impossible "chicken scampi".

Shrimp Scampi

INGREDIENTS:

1 1/2 pounds large shrimp (about 16 to 24)
1/3 cup clarified butter
4 tablespoons minced garlic
6 green onions, thinly sliced
1/4 cup dry white wine
2 tablespoons lemon juice, fresh if possible
2 tablespoons chopped fresh parsley
salt and pepper, to taste

PREPARATION:

Rinse shrimp and set aside. Heat butter in large skillet over medium heat. Cook garlic 1 or 2 minutes or until softened but not browned. Add shrimp, green onions, wine and lemon juice; cook until shrimp are pink and firm, about 1 to 2 minutes on each side.

Do not overcook. Add chopped parsley and salt and pepper before serving. Garnish with lemon slices and parsley sprigs if desired.

Makes 8 first-course servings.

CHICKEN SCAMPI

Serves 2

Ingredients:

***WHITE SAUCE: ***
1 tablespoon butter
2 tablespoons flour
3/4 cup milk; hot

***SCAMPI SAUCE:***
3 tablespoons butter
2 tablespoons garlic, crushed
1/2 teaspoon crushed red pepper
1 tablespoon dried cilantro, optional
2 teaspoons Italian seasoning
black pepper to taste
3/4 cup white wine
1 cup chicken broth
1/4 cup white sauce

***REMAINING INGREDIENTS:***
1/2 pk. angel hair pasta, cooked and drained
bell peppers; thinly sliced
red onions; thinly sliced
10 cloves of garlic; roasted
2 chicken breasts; sliced
olive oil

Directions:

For white sauce: Heat 1 Tbsp. butter in sauce pan, add 2 Tbsp. flour and cook for 2 minutes on med. heat. heat stirring constantly. slowly add 3/4 cup hot milk (hot so it won't get lumpy). Set aside. (Make sure that the white sauce is hot when adding to the scampi sauce)

For scampi sauce: Heat butter over low heat. add the garlic, Italian seasoning, crushed red pepper and black pepper. cook for about 2 minutes on low heat. add the wine and chicken broth. stir until combined. (I usually cook mine for about 30-40 minutes). add 1/4 cup white sauce and cook till slightly thickened. In a large skillet, saute chicken in a little olive till nearly done. add the peppers and onions, saute till chicken is done. add the sauce. saute until everything is warmed. add roasted garlic cloves. serve over pasta.

ROASTED GARLIC: Separate head of garlic into individual cloves still in 'paper'. toss in olive oil and wrap tightly in aluminum foil or a small pint sized dish with a lid. bake in 350* oven for 45 minutes. when the garlic has cooled to the touch you should be able to squeeze it out of the 'paper' shell of the individual cloves.

LOBSTER SCAMPI

Ingredients:

1/2 lb lobster meat
1/2 stick butter
1/4 cup olive oil
1 TBSP red pepper oil or crushed red
pepper to taste
1/4 cup dry white wine
2 TBSP Worcestershire sauce
1 TBSP Dijon mustard
1 tsp Hungarian paprika
16 cloves minced garlic
1 TBSP lemon juice

Method:

Melt butter over med low heat. Brown garlic slightly. Add oils (or crushed red pepper), Worcestershire sauce, wine and paprika. Whisk in mustard. Simmer five minutes. (This can be prepared ahead of time.) Bring lobster meat to room temperature. Just before adding meat to sauce, add the lemon juice. Heat lobster through and serve over yellow rice.

Notes: Lobster meat can be easily overcooked and become tough. Bringing it to room temperature will reduce the time required to heat it through.

while its nice to check things out otherwise, maybe some of the cool chefs on this site will answer your terrific question and let you know how to prepare the garlic, lemon, olive oil that goes into scampi. Shrimp, lobster, chicken, or any other form of scampi...i'm anxious to see some recipes to try.... :)

no, in the states, scampi is a sauce, usually served with shrimp consisting of white wine, garlic, and butter. sometimes you'll see parsley and lemon thrown in there, too.

excuse me but I'm Italian and the mean of scampo(singular) or scampi(plural) it's not a sause made from lobster, but is a sause fish made of this little crustaceans such as gamberetti, granki ecc.....

I have not heard of that but I have been to Europe and Scampi is a bread batter crusted type of shrimp that is deep fried and served with fries or some other kind of compliment.
