I love grilled squash and zucchini. Just drizzle a little olive oil over them and season w/ salt, pepper or anything else you like and throw 'em on the grill. Yum!

Congrats on loosing 6 pounds that is wonderful. I myself am on a diet and know the struggle. I love to grill carrots, the little baby ones are the best but they can burn really fast so you have to be careful. Also zucchini, yellow squash, eggplant, portobello mushrooms, white cap mushrooms, tomatoes (they can be runny so be careful), asparagus (I don't like them but lots of people do), corn on the cob of course. As a healthy dessert peaches are great grilled with a bit of lite cool whip on them, it's the best. Keep up the good work on your diet.

Try this you'll love it:
1 egg plant peeled and cut lenghtwise
2 zuchinnis cut lenghtwise
2 red or orange bell pepper sliced lenghtwise in thick slices
1 onion cut lenghtwise
Put a bit of oil in the bottom of a big cookie sheet or 2 medium ones
broil at 375 for 15 minutes on each side
When done, put in a big salad bowl and add 1/2 cup of tomato juice and a drizzle of olive oil, mix well!
I use that in sandwishes with light cheeze or with while grain pasta, you can even eat it on its own! Makes a lot and its delicious!!!
Once I used it in a lasagna, people were asking me for my recipe, I just made a regular lasagna and put that stuff in the middle layer instead of ricotta cheeze.

I like to take zuccini and yellow squash and onion. I kabob them. Then I take Good Seasoning Italian Dressing Powder and shake over the veg's. If they are too dry spritz a little olive oil on the kabob

I marinate portabello mushrooms, zuchini, yellow squash, pearl onions, green peppers and lightly steamed baby carrots in olive oil and garlic. Season with salt, ground pepper and herbs. I thread them on wooden picks to make kababs, and grill them over a charcoal grill. Yummy. Nice with a dipping sauce, such as cocktail or sour cream

While you're at it go a head and grill some tofu
or seitan- season it with tomato sauce or
lemon pepper seasoning. Boneless- apetite!
