I would suggest a hearty veggie stew or curry. For either, combine baby potatoes, bell peppers, carrots, onion, corn, celery, etc. You can add black beans or rice to make it more hearty. These are estimates of the calories 5 baby potatoes=80 calories 1 bell pepper=30 calories 1 large carrot=30 calories 1/3 cup black beans=120 calories half a cup basmati rice=100 calories For a stew add tomato sauce and veggie stock and any spices you desire. For a curry, blend garlic and half an onion with 2 Tbl curry powder in a blender. Use pam to cook through the onion mixture, About 5 minutes. Add veggies, cover with veg stock, cook until veggies are tender. You may want to add salt, pepper, cumin, cinnamon etc. Off the top of my head i'm not sure how many calories are in celery, corn or onion, but there is barely any.

go to your Local Library and You'll likely find something their if not the Librarian will be glad to order in a Low calorie vegetarian book. You can also try your local healthfood store.. they for sure
would have one. Usually vegetarians don't have to worry about calories.. just eat enough fruit that has ascorbic acid and that can help burn away excess calories. Eat fruits first, grains, cereals, beans and lastly veggies!

My children love these and so do I-
Tofu -
slice it the long way for a about an inch wide and put it in your george forman - grill it and then while still hot put some tsause and cheese over it.
tofu cut in bite size cubes and strawberries and blue in the morning( I like to use te tofu here that is really drained of the water. I just let it sort of air dry in the fridge for a day.
tofu sliced like thick french fries, coated with italian flavored bread crumbs and baked in the oven use any dip you like. (again I like to dry out the tofu - same way as mentioned above)
salad - with nuts, tomatoes beans

Super easy-steamed rice and veggies, green peppers stuffed with rice, grilled veggie kababs, quinoa (pronounced keen wa, available at health food stores) Rice pasta (Tinkyada brand is best-much better for you than wheat pasta) with a light olive oil and garlic sauce, cous cous, steamed rosemary new potatoes, veggie spring rolls (made with tapioca or rice paper, served raw or steamed) raw kolrabi with onion dressing, any nice crunchy raw veggies and fruit, fruit kababs with yogurt dipping sauce (watch out for hidden gelatin (animal bones)in yogurt) Beans, legumes, lentils, pulses-all high in fiber and protein, low in fat. Beans make a great meat substitute in tacos, burritoes, etc. Homegrown sprouts are fun, and a great hobby. I make alfalfa, mung, fenungreek, brocolli, chick pea, green pea, lentil, sunflower, chia, and all sorts of other sprouts-great in salads or juiced with carrots, celery, parsley, apples, etc. Raw or lightly steamed beets are delish. Hope this gives you some ideas. I could go on and on. Try foods you have never had before. Rutabegas make lovely oven fries, as do turnips. Swiss chard, kale, turnip greens, etc

I made egg fried rice the other day it was amazing and its filling and you could have it with some quorn
Fry onions in a pan
Boil Rice
Add Rice to pan
add some peas
add soy sauce, veg oxo cube and seasoning
break 2 eggs over the whole lot and fry
Delicious!!!

how about a stir fry , if you use 1 cal spray oil with a load of veg, a low fat stir fry sauce loads out there and some soft noodles.really healthy and low in cals.It`s my friday favourite leaves plenty of cals for the wine!!

Try the Mushroom Stroganoff, you can buy it in sainsburys and it taste lovely! My mum always buys it for me.

most vegetarian meals are low in calories, have you tried quorn?it tastes like chicken and is very low in fat, high in protein and very versatile.
