Make some delicious meat and vegetable kabobs, marinated in Italian dressing beforehand. Bring along some smoked sausages to throw on the grill - you could throw a full onion, cut in half and placed face down, on the grill as well and serve it all up together in a bun with some hot mustard. The onion will give your sausages an even better, more robust flavor. Don't feel like grilling? Stop at a deli for some sandwiches or better yet, a family Italian restaurant for some stromboli and calzones, which travel well wrapped in aluminum foil.

I am a race fan myself. 2 ideas off the top of my head that are easy to serve:

Hoagie bar. Put out chafers or crock pots-one filled with Philly Cheesesteak filling (sliced steak, peppers and onions) which you have made in advance-and one filled with big meatballs in marinara sauce. And have a big bowl of shredded mozzarella cheese on the side or provalone slices. People can have either a philly cheese steak or a meatball sub. The cheese goes with either.

My second idea is a seafood boil. In a turkey fryer or large stock pot, get some zatarain's crab boil and add it to the boiling water. slice in half, squeeze and drop into the pan several sliced lemons. Then you add your new potatoes and small ears of sweet corn. When the taters are about done, you drop in your shell on, raw shrimp and your crab legs. It won't take long for the seafood to cook. When it's finished and strained, dump the whole mess into the picnic table covered with old newspaper or butchers paper. Serve with little pots of melted butter. MMM!

A third idea, which is one of our favorites, is to keep warmed on the stove: a big pan of parboiled rice, a big pot of shrimp etouffee and another pot of red beans and rice with sausage. I put out the plates and a basket of corn muffins and the guests help themselves.

Upscale tea without the tea (substitue bourbon, mint juleps, etc). Finger sandwiches, scones, canapes. Get flowers and encourage everyone to dress up (including the big hats you see at the "big" races).

BBQ this is big at the derby, add mint julips and a minty dessert. there is also a dish called burgoo but I do not know how this is made
