I am a chef cooking for the elderly. I make diabetic cakes but want to put a more interesting topping on, other than jam. Does anyone have a diabetic icing/frosting recipe they could suggest?

I like to mix sugar free Coolwhip with sugar free pudding. Just empty a package of sugar free Jello instant pudding mix into a container of Coolwhip. Don't make the pudding, just empty the powder into the Coolwhip for flavoring.
I also like to put fruit into the mix for a little extra flavor...that is if your patients can have the fruit.

Cool whip is a free food . And it stays nicely.
Remember you are helping these people count carbs, not sugar.
A regular cake may have just the same carb levels as a "diabetic Cake ".
