It is tough to cook for 2 sometimes. Here are a couple favorites that I cook up for me and the boyfriend:

1 package of cubed steak (my grocer sells them in packages of 2 and I use one package of 2)
1 can Cream of Mushroom soup
In a 9X9 baking dish, put the cubed steak in and cover with cream of mushroom soup. Cover the dish with foil and bake at 350 degrees for 35-40 minutes. Comes out great, steak is tender and you also have instant gravy.

Also...

Stuffed Butterfly Pork Chops

2 Butterflied Pork Chops
1 Box of Stove Top Stuffing

Make the stuffing as per the directions. Stuff the stuffing inside the pork chops and fold over. Bake for 25 minutes.

2 Chicken Breast (boneless and skinless)
1 tbsp of Honey
Italian Dressing

In a 9 X 9 baking dish, place the breasts and drizzle honey on top. Cover with Italian dressing (Kraft Zesty Italian is a great one) and let marinate overnight. Drain off excess and bake for 20-25 minutes.

It's easy then to put together a quick salad, a quick rice dish, or a package of instant mashed potatoes to go with these dishes while their baking.

Buy a freezer, some tupperware and one day a week to cook heavy and portion out stews, sauces, roasts and things for later in the week. Many, many foods freeze well and re-thaw even better. The fun is in the discovery.

If you only need to cook for 2 people, try making individual pizzas, small omlettes or quiche. How about making a normal size meal or lasagne, or casserole, and freezing half?
