It really depends on the pagan. I was called by Artemis when I was 20, and she's the goddess I've worked with the most. I'm not Greek, but I identify with her as an independent person of female genetics.
Some people are happy working with multiple deities; others work with just one though they may acknowledge the existence of others. Pretty much all views of deity are found among neopagans--monotheism, henotheism, polytheism, pantheism, panentheism, even atheism.

I was taught that all Gods and Goddesses are aspects of one God and Goddess, and for the most part that's what I still believe.
Sometimes I invoke Them in those general terms -- as the Goddess and the God, or the Lord and the Lady -- or, I work with aspects of Them that I have researched and Who are appropriate to the particular need I have at the moment.
My ancestors were Irish Celts, so many of the Deities I honor have ties to the Celtic Deities of that part of the world. However, I have also found that some Egyptian Deities resonate for me.

We are eclectic witches and we identify with the Wicca ways. Established religions have let us down but we had a need for spiritual guidance and to live by a moral code that we could raise a family with. The concepts that is most important to us is "And it harm none, do as thou wilt ". We don't follow a Deity though we all do offerings to the god/goddess regardless

I just loosely identify the Gods with the forces of Nature- the Oceans, Rivers, Thunder, Wind, Earth, etc.

For many, it's a combination of what you mention.
We may have some that we identify with, but if you look, each has specific areas that they deal with, much like patron saints. We call on these for specific areas of need.

I admire the creativity of the polytheistic religions more than the monothiestic ones. Its just plain lazy to say that your one god is everything and everywhere. Pfft, lazy christians.
