I bought a galangal root because it looked cool but I don't know what to do with it except use it in some thai cuisine, which I don't plan on doing. I heard it's like ginger, but the two aren't interchangeable in taste. So if I can't use galangal like ginger in dishes, than what good is it besides using in Thai food?

I've actually never heard of using it in anything except thai food. It's great in thai soups. I found this recipe online that isn't Thai:

Besides that, I guess just experiment with it in some not thai dishes, though I would stick to asian cuisine.
