Here are a few books that might help. I am somewhat of an expert on this topic (through personal experience) and have read them all. These are all very good books, and just reading about your problem and knowing that there are steps you can take to make it better will make a world of difference to you.

There must be something that you've learned to do in your life to help you cope with the stress. Whether it's watching tv, taking a bubble bath or in your case, eating. Since eating helps you cope with your stress, then try eating smart things, like vegetables and fruits. Working out also helps. A good spin class or an aerobics class will take away that stress. I know it may sound like everyone else's answers but I find that when I go to the gym, I feel so much better. I'm addicted to xanax because of my anxiety and that's another issue but I too also suffer from stress over the smallest thing. I lock myself in my room with a bag of baby carrots, turn the fan on to muffle noise and turn on the tv.

If you don't want to see a doctor, how about a psychologist? Weight gain is just the beginning. And with that is a host of other problems like heart disease and strokes. You also might suffer from sleep issues and have a fatality accident. Isn't seeing a doctor better than living like that???

i too get stressed and scared at smallest things. But when i look at my condition, i have found that these things are really insignificant compared to things which i should be really scared/stressed about. But i am not scared of the major ones. It may sound strange but its true. Most of the time i am scare of minor things which put me under stress when i am working on my main task. I deal with these by just no acknowledge them, these problem are basically how i look, my dressing sense. but at my talks/meetings i make a point to stick to issues at hand and once engrossed in those i tend gather more confidence and find my self at ease in relieving the stress factor. hope this helps you, remember there no one is trying to dampen your enthusiasm, unless you let them to do so.

That's what doctors are there for--to help you. They diagnose and treat you. There are free and sliding scale mental health clinics in every state, and nearly every city--if money is the reason you don't want to go to the doctor.
You should see someone even for the fact that you've gained 30 pounds in a relatively short period of time.
I know you don't want to, but please reconsider and see a doctor.

pray. ask God to help you overcome the obstacles in your life that are making you miserable and keeping you from doing the things you need and want to do.
God loves you and He has a purpose for your life! and His purpose for your life does not include fear or paranoia. God wants to help you, and He will get you through whatever problems you may face in life, and that is a promise.
I will certainly keep you in my prayers.
