All the ones in the market are canned and high in sodium, the dic said i must watch the sodium intake. Does anyone know how to make the soupy part of vegetable soup?? i have the vegetables and all but i need the sauce or whatever.

I make a vegetable stock with onion, celery, zucchini, tomato, corn, and a couple of cloves of garlic. If you like cooked carrots, add them, too. Chop all the vegetables small, put in a large pot with water, and simmer until all the veggies are disgustingly squishy. Strain out the veggies and discard. The stock is very rich and a nice base for whatever you want to add to it. I freeze the extra in 2 cup containers for later use.

To make the stock into soup, just add any combination of vegetables you like and cook them until they are tender.

You'll want to add in first the vegetables that take longer to cook and put the quick-cooking items in last.

Remember to make use of herbs, spices and vinegars to add flavor (not calories or sodium) to the soup!

Start with a couple of cans of diced tomatoes (do not drain) - read the label to check for sodium content. Most of canned tomatoes have little or no sodium. Add a bag of your frozen veggies. If you want more juice - you can add a little water or a red wine. Throw in some fresh ground pepper and a couple of bay leaves. Simmer for about 30 minutes.

You can boil the carcess of a leftover turkey or chicken to make a good starter stock for vegetable soup just strain out the meat if you want. Beef stock will work as well. Just be sure not to add salt as you cook the meat. Then add any veggies you like, and simmer slowly.

I got a really easy recipe thats so good.
You need beef broth or chicken broth. you can get low sodium i belive.

all kinds of diffrent veggies. i love cabbage, potatoes carrots celery, califlower broccoli corn and green beans in mine. But what ever you like
you can add some meat if you want. If im makin it for myself and my roomate i go no meat the veggies are fillin enough but if i am makin it for others i will buy some stew meat or stir fry beef and cook it then add it to the soup
Season it with onions, garlic, pepper, salt, oregneo, parsley any thing you like.

All you have to do is put a couple cups of v8 and broth in a pan taste it if you want more tomatoe taste add another coup of v8 and then two cups of water. Add all your veggies cook till tender add cooked meat and seasoings. do this all to taste its pretty easy so you can make it any way you like it. If you want it spicy adds some tobasco or red pepper. No matter what you add its gonna half the sodium canned does.

V8 juice makes an excellent base for a vegetable soup - However, I am not certain if the sodium content of V8 is outside the limits of what you are looking for.

Bring to boil
Let cool
Remove half the Veg and 1/4 water and puree in blender
Add to the rest of soup, add 1/4 tsp of curry powder for thickness and more taste.

2 packages frozen mixed vegetables
2 (14.5 ounce) cans stewed tomatoes, diced
2 stalks celery, diced
1 onion, diced
1 teaspoon Worcestershire sauce
1/2 teaspoon ground thyme
1 bay leaf
1 teaspoon black pepper
1/3 cup ketchup
3 cups canned vegetable, chicken or beef broth (low-sodium)

Place all ingredients into large soup pot or dutch oven and cook over medium heat until it comes to a boil.

Reduce heat to low, cover and let simmer for 1 hour.

Discard bay leaf and serve.

If you need a thickner for your watery soup and sodium free,get a tablespoon of wholegrain flour mix it with a teaspoon of cold water and add to your soup mixture stir till thick.

Get a good recipe, a large pot, vegetables, and start chopping.

my favorite thing to make. visit the grocery store and buy a few different kinds of vegies, chicken broth, seasonings like sage/pepper/salt/garlic. i like to use coconut milk and a little green curry, too. this is a great way to experiment. just clean and cut the vegies and add them to the broth. the milk just makes it richer. i like to add a handful or two of rice to make it more filling.
bring the broth to a boil and then simmer for about 45 minutes. you can freeze some of the soup, too. your soup will be different each time you make it. have fun and bon appetite!
