it is basicly cell damage. the degration of the cells causes loss of basic nutieints , texture of products and makes products take on disagreeable taste.
you cannot freeze meats fast enough to prevent most freezer burn.
rule of thumb::
beef ; 1yr tops.
pork ; 6 mo. tops.
poultry ; 6-8 mo. tops.
veg. sealed / or frozen in water 6 mo.

the thing about freezer burn is that it makes the food gross its really nasty specially with ice cream it just ruins the flavory goodness in it all
