It's not safe for a person who is not a highly skilled chiropractor to "pop" (or adjust) your back. You can create a very big problem down the road. When she "pop's" your back, she's getting hypermobile segments to move and the hypomobile segments stay fixated. This is a vicious cycle that leads to arthritis and possibly debilitating pain.
I suggest you go to your chiropractor for help. Besides, a person who doesn't have a license to practice chiropractic could be put in jail for trying to do so. It's just as bad as practicing medicine without a license and is equally dangerous. there's a reason chiropractors go to school for 8 academic years!
(below Dib says that a chiropractor shouldn't help you with your back ... who better than a chiropractor? That's what we're for! 10,000,000 patients can't be wrong!)

I'm not convinced a chiropractor should be doing this, let alone your girlfriend. Be careful, once you get back problems they tend to stat with you.

I get my boyfriend to lay on his stomach on the bed, straddle him and force down with both hands on different spots on his back as hard as I can

if she is light enough, she could walk on your back while you're laying down
but most girls aren't, unless they're like 100 pounds...
so have her put one hand in a fist and put her arms around you, put her hands where it needs to be cracked, put her other hand on top of her fist hand, and have her squeeze as hard as she can, but not as fast... gradually adding pressure, and possibly moving upward if it doesn't crack after adding the most pressure she can. try it out, hope i helped
