Perhaps because we are human beings. We have ability to be skeptical. Well, even animals have the same ability, but not as critical. If you are not a skeptical being, you certainly will believe anything that I will say. In reality, you will be skeptical of things that I'm saying, therefore, you will have hard time believing me.
It is not matter of choice I believe. I won't get too deep into it, but .... If I give you an apple, would you say that it is real? Will you believe me? Will you believe yourself that it is an apple? I can ask you another question, but it will make this more complicated, so I will move on.
God is not something like an apple that you can see or hold. Matter of fact, it is not something that you can have your own theory of if others have no opinion of it. If you are the only person living in this earth, would you say that you have some sort of justification of an apple? You know you can eat it or hold it etc..., but how about god?
There are many things you can ask, but it make things more complicated. That is why I'll just stop here.

Because god is an idea that people use to kill and control one another with amazing rapidity. Picking the wrong religion in certain parts of the world can mean death, though it's better today than in the past.
Then add that there's no evidence for the existence of any deity and, well...you get the picture. It's tough to support faith when one sees how other people have used it.

Faith comes from the belief that something is real without actually seeing it. But belief is faith that it is real. Jesus gave us many reason to believe and therefore our faith should grow. but only if we believe.
Jesus said; Do you believe I am able to do this. And I say yes Lord I believe.
It is a simple choice if you believe

Faith in God has little to do with believing or not believing something. If you can not simply accept God as your creator, a mental belief won't do much of anything. God speaks to our hearts, not to our heads. That is the primary reason Christians and science can't agree on anything most of the time. One only uses logic and thought, the other follows their heart.

Because a whole range of factors - hereditary, environmental, thought processes, ideology - fight against each other. As much as it might make the world a better place, we can disassociate ourselves from some of these things and make a logical choice. Hence, religion.

It is simple, people are the only ones trying to make everything complicated, chapter and verse dissection, every single word, what does it mean, science, nature and many more, which are only diversions from the simplicity.

Because the notion "choosing to believe" is incoherent. One would be committed to the rationality of the following "conversation."
Suppose, for example, while walking in the rain you met a woman and said, "Fine rain we're having."
"It is not raining," she replied, "this is Tuesday."
"Tuesday," you said, "what is raining got to do with Tuesdays?"
"Well," she replied, "I don't believe in rain on Tuesdays."
"Oh," you say, "you mean you would rather it not rain on Tuesdays."
"No," relied the woman, "I mean I have chosen believe in rain at all on Tuesdays. I choose, however, to believe in rain the other days of the week."
Would such a belief be rational, do you think? Can we make sense of what this woman purports to do: choose to not believe in rain on Tuesdays?
It doesn't seem so. She still gets wet. Note that the question is not about her beliefs about rain on Tuesdays, but rather the coherency of those beliefs.

If you don't look for someone else to dictate to you what's good, what's evil and you use common sense or follow people who are intelligent and not self-rightous or hypocrites, then It's a very simple choice.
