Sliced SweetPotato Pie
Ingredients:
pastry for a 9-inch double crust pie
3 medium-size SweetPotatoes (about 2 1/4 pounds total)
1/2 teaspoon salt
1/2 cup granulated sugar
1/3 cup firmly packed brown sugar
2 tablespoons lemon juice
2 tablespoons all-purpose flour
1 tablespoon pumpkin pie spice
1 tablespoon butter, cut into bits
Preparation:
Preheat oven to 425 degrees F. Line a 9-inch pie plate with 1 layer of pastry, set aside.
Wash, peel and cut SweetPotatoes into 1/4-inch slices. Combine 1 cup of water and the salt into a large saucepan. Add SweetPotato slices. Cover and bring to a boil over high heat. Reduce heat and simmer until SweetPotatoes are just barely tender when pierced, about 5 minutes. Drain slices, then rinse them with cold water until they are cool to touch. Drain slices well, transfer them to a large mixing bowl.
To SweetPotatoes, add sugars, lemon juice, flour and pumpkin pie spice. Toss gently with a spatula until slices are evenly coated. Spoon SweetPotatoes into pastry-lined pie plate, dot top of potatoes with butter. Place top pastry over filling and crimp top and bottom pastries together to make decorative edge. Cut 3 to 4 slits in the top to allow steam to escape.
Bake in 425 degrees F. oven until crust is browned and SweetPotatoes are tender when pierced, about 50 minutes. (If edges of crust start to brown too quickly, drape lightly with strips of foil. Cool pie on wire rack at least 1 hour. Serve warm or cool.

Hawaiian Sweet Potatoes Recipe
Ingredients:
2 cans (l-lb, 7·oz size) sweet potatoes, drained
1 can (9 oz size) crushed pineapple, undrained
6 tablespoons butter or margarine, melted
3/4 teaspoon salt
1 dash pepper
1/2 cup packaged dry bread crumbs
2 tablespoons brown sugar
1 dash cloves
Directions:
Preheat oven to 375F.
Mash potatoes in medium bowl; measure 4 cups. Stir in pineapple, 2 tablespoons butter, salt, and pepper. Turn into 1-quart ungreased casserole.
Combine remaining butter with bread crumbs, brown sugar, and cloves. Sprinkle over potato mixture; bake 30 minutes.

Make a sweet potato "souffle." Souffle is in quotes, as it is not a true souffle.
Combine 4 lbs. of cooked, mashed sweet potato with 1 stick butter, 1 cup sugar, 4 eggs, 3 Tbs. self-rising flour, 1 cup milk, 1/4 tsp. salt, 1 tsp. each of vanilla extract, coconut extract and almond extract. Divide mixture between two souffle pans. Combine 1/2 cup chopped pecans, 2 Tbs. firmly packed brown sugar and 1/4 tsp. cinnamon. Sprinkle on top of souffles. Bake at 350 for 1 hour. It will get light and fluffy like a souffle, but you won't have to mess with separating the eggs, and beating the egg whites.

Sweet Potato Casserole With Praline Topping
The streusel is both stirred into the casserole and sprinkled on top.
1 cup all-purpose flour
2/3 cup packed brown sugar
1/4 cup chopped pecans, toasted
1/4 cup stick margarine, melted
1/2 teaspoon ground cinnamon
4 medium sweet potatoes, peeled and halved (about 2 1/2 pounds)
1/2 cup granulated sugar
1 1/2 teaspoons vanilla extract
1 large egg white
1 (5-ounce) can fat-free evaporated milk
Cooking spray
Preheat oven to 350°.
Combine first 5 ingredients in a small bowl, stirring to form a streusel. Set aside.
Place potatoes in a Dutch oven; add water to cover. Bring to a boil; cover, reduce heat, and simmer 30 minutes or until very tender. Drain well; mash in a large bowl. Stir in 1 cup streusel, granulated sugar, vanilla, egg white, and milk. Spoon into a 2-quart casserole coated with cooking spray; top with remaining streusel. Bake at 350° for 45 minutes.

Not-so-sweet Baked sweet potatoes
4 medium peeled sweet potatoes, cut into 2-inch pieces
(about 2 1/4 lb.)
2 medium Oso Sweet or other sweet onions, cut into 1-inch pieces (about 1 lb.)
2 Tbsp. extra-virgin olive oil
3/4 tsp. garlic-pepper blend (such as McCormick)
1/2 tsp. salt
Preheat oven to 425 degrees.
Combine all ingredients in a 13 x 9 baking dish, tossing to coat.
Bake at 425 degrees for 35 minutes or until tender, stirring occasionally.
Makes six servings (serving size: 1 cup).

Sweet Potato Croquettes
INGREDIENTS:
2 cups mashed sweet potatoes, about 4 medium sweet potatoes
2 tablespoons butter
1 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons brown sugar
fine dry bread crumbs, plain
1 egg, slightly beaten
1 tablespoon water
oil for deep frying
PREPARATION:
Combine mashed sweet potatoes, butter, salt, pepper, and brown sugar; beat until smooth and well blended. Chill thoroughly. Shape chilled mixture into croquettes. Mix slightly beaten egg with water. Dip sweet potato croquettes into crumbs, then into beaten egg mixture, then in crumbs again.
Fry in hot deep fat, about 370°, until sweet potato croquettes are golden brown. Drain well.

Peel sweet potato. Put sweet potato in boiling water and boil until done. Mash with fork. Add butter. Eat.

Okay, just made this a while back...
Bake the sweet potatoes, then mash them together with some butter, honey and bananas.. top with brown sugar mixed with butter, small amt of flour, cinn and nutmeg.. bake in a 350 oven until it looks done.. delicious....
