Maple-Roasted Chicken Thighs with Sweet Potatoes
Yields: 4 main-dish servings
Prep Time: 15 minutes
Cook Time: About 40 minutes
• 4 large skinless chicken thighs (about 1 1/2 pounds with bones)
• 2 small sweet potatoes (about 1 pound total), peeled and cut into 1-inch chunks
• 1 small onion, cut into 1-inch pieces
• 1/2 (16-ounce) bag baby carrots or 8 ounces parsnips, cut into 1-inch chunks
• 1/4 cup maple syrup
1. Preheat oven to 450° F.
2. In 15 1/2" by 10 1/2" jelly-roll pan or large shallow roasting pan, combine chicken, sweet potato chunks, onion, baby carrots, maple syrup, 1 teaspoon salt, and 1/2 teaspoon pepper, and toss to coat.
3. Roast chicken mixture 40 to 45 minutes or until juices run clear when thickest part of thigh is pierced with tip of knife and liquid in pan thickens slightly, stirring vegetables once and turning chicken over halfway through roasting.
Southwestern Meat Loaf
Yields: 6 main-dish servings
Cook Time: 1 hour, plus 10 minutes to cool
Total Time: 1 hour 10 minutes
• 1 1/2 pounds lean ground beef
• 3/4 cup crushed baked corn tortilla chips (about 2 1/2 ounces)
• 1 large egg
• 1 can (15 1/4 ounces) whole-kernel corn, drained
• 1 jar (11 ounces) medium-hot chunky salsa (about 1 1/4 cups)
Pesto Ravioli and Peas
Yields: 4 main-dish servings
Cook Time: 10 minutes
Total Time: about 16 minutes
• 1 pound refrigerated cheese ravioli
• 2 medium tomatoes, cut into 1/4-inch dice
• 1 cup loosely packed fresh basil leaves, chopped
• 1 package (10 ounces) frozen peas
• 1/4 cup refrigerated basil pesto
1. In large saucepot, prepare ravioli in boiling water as label directs.
2. Meanwhile, in small bowl, combine tomatoes, basil, 1/8 teaspoon salt, and 1/8 teaspoon coarsely ground black pepper; set aside.
3. Place frozen peas in colander, and drain ravioli over peas. In large serving bowl, toss ravioli and peas with pesto; top with tomato mixture.
1. Preheat oven to 375 degrees F.
2. In large bowl, mix ground beef with tortilla chips, egg, corn, 1 cup salsa, 1/2 teaspoon salt, and 1/4 teaspoon coarsely ground black pepper just until well-combined; do not overmix or meat loaf will be tough.
3. Transfer meat mixture to small roasting pan (14 by 10 inches); shape into 10-inch by 5-inch loaf. Spread remaining 1/4 cup salsa on top of loaf.
4. Bake meat loaf 1 hour or until temperature on meat thermometer inserted in center of meat loaf reaches 160 degrees F. Let meat loaf stand 10 minutes for easier slicing.

Egg Tomato Scramble
INGREDIENTS:
6 slices bacon
2 large ripe tomatoes, peeled and sliced
salt and pepper to taste
1/2 teaspoon sugar
4 large eggs, well beaten
PREPARATION:
Fry bacon until all fat has been rendered; drain bacon on paper towels. Leaving about 3 tablespoons of bacon drippings in the skillet, add tomatoes, salt, pepper, and sugar. Cook over medium-high heat for a minute or two, then lower heat to low. Cover and cook for 15 minutes, or until tomatoes become thick. Stir occasionally to keep from sticking. Add the eggs. Stir until mixture is somewhat grainy and eggs are cooked, but still have moisture. Serve with the cooked bacon.
Serves 4.

Place these two ingredients in a slow cooker on low for 6 - 8 hours. Delicious!

1 pound of lean ground beef
1 med onion, chopped
1 rib of celery chopped
1 can of vegetable soup
1 can of pork and beans
salt and pepper
Fry ground beef until no longer pink, add onion and celery and fry until onion and celery are tender. Add the can of vegetable soup and pork and beans, stir well to incorporate all ingredients. Season with salt and pepper. Simmer for 1 hour. Serve with salad and buns.
