1.LEMON BLUEBERRY CAKE
INGREDIENTS:
2 1/2 cups unbleached flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 sticks butter, room temperature
1 1/4 cups sugar
1 teaspoon vanilla
1/2 teaspoon grated lemon peel
2 large eggs
1 cup sour cream

FILLING
2 tablespoons sugar
1 cup blueberries
1/2 cup chopped walnuts

TOPPING
1 tablespoon sugar
1/4 teaspoon ground cinnamon
PREPARATION:
Stir together flour, baking powder and soda. In large bowl beat together butter, 1 1/4 cups sugar, vanilla and lemon peel. Beat in eggs one at a time, beating well after each addition. Beat in sour cream until well blended.
At low speed gradually beat in flour mixture until blended. Spoon about one-third of batter into greased and floured 9-inch tube pan. Sprinkle with one-half of the Blueberry Filling (below). Repeat layers. Spread with remaining batter. Sprinkle with Topping (below). Bake on rack below center in a preheated 350° oven for 30 to 45 minutes, or until a cake tester inserted in center comes out free of batter.
Cool on a wire rack for 5 minutes. Loosen edges and around tube and turn out on rack to cool completely. Invert on a cake platter.
Blueberry Filling: Stir together 2 tablespoons sugar, 1 cup blueberries and 1/2 cup chopped walnuts.
Topping: Stir together 1 tablespoon sugar and 1/4 teaspoon ground cinnamon.

INGREDIENTS:
2 cups fresh blueberries
juice and zest of 1 small lemon
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2/3 cup granulated sugar
1/2 cup low fat or whole milk
1 large egg
1/4 cup melted butter
1 teaspoon vanilla
3/4 cup granulated sugar
1 tablespoon cornstarch
1 cup boiling water
PREPARATION:
Place blueberries and lemon juice in a buttered 8-inch square pan. Mix flour, baking powder, soda, salt, spices, and 2/3 cup sugar. In another bowl whisk together the milk, egg, melted butter, and vanilla.
Stir dry ingredients into the milk mixture; pour evenly over berries, spreading if needed. Mix 3/4 cup sugar with cornstarch and sprinkle evenly over batter. Slowly pour boiling water over all. Bake at 350° for 40 to 50 minutes.
CHEESE CAKE RECIPE
1.Cheesecake With Fruit Topping
INGREDIENTS:
Crust Ingredients:
1/4 cup confectioners' sugar
1 1/2 cups graham cracker crumbs
4 ounces butter, melted

Filling:
1 cup granulated sugar
3 packages (8 ounces each) cream cheese
1 teaspoon vanilla extract
4 eggs
.
Topping:
1 to 2 cups sour cream
1 can (21 ounces) cherry pie filling or sweetened sliced strawberries (drain excess strawberry juices)
PREPARATION:
Combine crust ingredients; pack firmly in the bottom of a springform pan, 8 or 9-inch.
Combine filling ingredients and mix thoroughly. Pour into the graham cracker crust; bake at 350° for 50 minutes.
Remove cheesecake from the oven and top with sour cream. Return to the oven for 5 minutes longer. Top with pie filling or sweetened sliced strawberries and chill before serving.
2. Plain Cheesecake
INGREDIENTS:
5 tablespoons melted butter
1 1/4 cups graham cracker crumbs
1/4 cup granulated sugar

Filling
4 packages (8 ounces each) cream cheese, softened
1 can (14 ounces) sweetened condensed milk
4 eggs
1/3 cup all-purpose flour
1 tablespoon vanilla extract
PREPARATION:
Preheat oven to 300°.
Combine melted butter, graham cracker crumbs, and sugar; press into bottom of a 9-inch springform pan.
In a large mixing bowl, beat cream cheese until fluffy. Gradually beat in condensed milk; beat until smooth.
Add flour, eggs, and vanilla; beat until sell blended. Pour into prepared crust. Bake for 1 hour, or until lightly browned. Cool. Chill and garnish with dollops of whipped cream around edge and sliced fresh strawberries.

if you're looking for something quick and easy, you can use a lemon cake mix... slice each round in half horizontally to make 4 layers, and use blueberry pie filling between each one... this makes a nice tall cake that you can cover with cream cheese icing and then decorate with a few fresh blueberries on top.... looks like it was much more work than it was. nice for last minute bake sales.
