In the spirit of St. Patrick's Day, I'll have to say corned beef and a little bit of fried cabbage on rye or pumpernickel. Honey mustard or a spicy mustard are awesome with it.

just about anything, it is your taste buds that are important, specially nice with ham, chicken, pork - keep in mind that honey mustard is not hot mustard

I only ever use it with chicken. Chicken nuggets, grilled chicken sandwich or a fried chicken patty sandwich.
