Mint Confections

4 to 5 cups powdered sugar
1/2 cup butter (1 stick) room temp
1/4 marshmallow fluff
1/2 teaspoon salt
work it all together

add 1 teaspoon mint extract.

Form little balls and use a glass to flatten them into circles
Put on to waxed paper or parchment and put in the fridge or freezer to dry out. YUM

You can melt some chocolate chips and coat them if you like.

Chocolate Mint Pie

Graham cracker crust (purchased or homemade in a 9-inch/23-cm pie plate)
1 10-oz/285 g package fudge mint cookies, crushed (about 40 cookies or 2 cups/500 mL crushed)
6 tbsp/90 mL hot water
6 oz/170 g reduced-fat (neufchatel) cream cheese
1/3 cup/80 mL sugar
1 tbsp/15 mL milk
1/2 tsp/2.5 mL Peppermint Extract
1 8-oz/227 g container non-dairy whipped topping
1/2 tsp/2.5 mL Double-Strength Imitation Clear Vanilla Flavor 6 to 10 drops green food coloring

Directions
Mix crushed cookies and hot water; spoon into graham cracker crust and gently spread to cover bottom. Beat cream cheese until smooth; gradually beat in sugar, milk and peppermint extract. Mix white vanilla extract into whipped topping and fold into cream cheese mixture until smooth. Stir in food coloring and spoon into crust, spreading evenly. Refrigerate overnight. Garnish with fresh mint leaves, if desired, before serving. Makes 10 servings.

Take some choclate chips (or other chocolates) and put them in a bowl. Drop 5-6 drops of extract in the bowl and then seal the bowl for a couple days.

When you open the bowl again, you'll have mint chocolate !!!

Add about 1/4 tsp to your next batch of chocolate pudding. Then put your serving in the freezer for a little while and when you are ready to eat it, it tastes like a peppermint patty. Yummy!
