Like where they give u a bowl and u walk down selecting raw ingredients and they cook. What is the raw ingredient selection, or does it vary? im going to the Genghis Kahn Mongolian Restaurant in Sydney, Australia.

It usually does vary restaurant to restaurant. I've been to two. One was more along the lines of a Chinese buffet/Mongolian grill. They had noodles, a variety of meats (seafood as well), and veggies. They also had egg rolls and desserts on the buffet line. I can't remember much more than that. It was 6 years ago.

The Mongolian BBQ that I go to regularly is called HuHot, and it started in Iowa, I believe (where I am). I'm there about once a week. They have beef, chicken, pork, and several seafoods (krab included), three kinds of noodles (couldn't tell you what they are), and a ton of veggies from tomatoes to spinach. They also have a sauce bar where you ladle five to six different sauces to create a good combination.

I've never been to Genghis Kahn. There's one in KC, but I don't think it is the same ownership. Regardless, that website is below. It might have similar info to help you.
