GOLDEN RAISIN BUNS
1 c. water
1/2 c. butter
1 tsp. sugar
1/4 tsp. salt
1 c. flour
4 eggs
1/2 c. raisins, plumped
Combine water, butter, sugar and salt in saucepan. Bring to a boil and add flour. Add eggs, one at a time. Stir in raisins. Drop by heaping tablespoons about 2 inches apart on greased baking sheet. Bake at 375 degrees for 30-35 minutes (less). Remove and cool. Frost with the following.
FROSTING:
1 tbsp. butter
1 1/2 tbsp. cream
1 c. powdered sugar
1/2 tsp. vanilla
Melt and remove from heat. Spread on buns.

Carrot & Raisin salad
*
3 cups shredded carrots
* 1/2 cup raisins
* 1/3 to 1/2 cup mayonnaise
* 1 tablespoon lemon juice
* 1 tablespoon brown sugar
* Dash salt
* Optional: 1 cup chopped apple, or well drained crushed pineapple, or 1/2 cup chopped celery
You can shred the carrots in a food processor, or by hand using a cheese shredder. It usually takes about 5 or 6 carrots to make 3 cups, but measure it as you go along, to be sure. A little more carrot is preferable to a little less. While the carrots are shredding, soak the raisins in a cereal bowl of warm tap water. This plumps them up so they taste better in the salad. After soaking for a few minutes drain them and squeeze them dry with your hand. In a medium sized mixing bowl, combine the shredded carrots, raisins, mayonnaise, lemon juice, sugar, and salt. Add one or more of the optional ingredients if you feel so inspired. Mix it all up and chill it until serving time. This is good to serve up with hot foods in the winter time when you need a cold salad to balance out the menu. If this recipe makes too much, you may cut it in half or thirds.

Amish Rice Pudding Ingredients:
2 c Scalded Milk
1/3 c Rice (precooked by boiling
for 20 minutes)
Place above ingredients in a
buttered oven proof dish.
Sprinkle in 1/2 C of
raisins.

2 c Half & Half
1/2 c Sugar
2 ts Vanilla
1 pn Of Salt
Amish Rice Pudding Instructions:
AMISH RICE PUDDING Pour the above ingredients on top of rice mixture and DO NOT STIR OR MIX!!!!! Sprinkle top with cinnamon or nutmeg, or both if desired.
Bake at 350 oF for 1 hour by placing oven-proof dish in a pan of water to make a water bath.
Serve warm with whip cream.

Cinnamon Apple and Raisin Crisp
INGREDIENTS
Oven Baked Apples
3 pounds Granny Smith or Golden Delicious apples
2 tablespoons California raisins
1 tablespoon lemon juice
1 tablespoon melted unsalted butter
5 tablespoons granulated sugar
1 tablespoon rum
Cinnamon Crisp
1/2 cup all purpose flour
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
5 tablespoons (2.5 ounces) chilled, unsalted butter, cut into 2-inch pieces
8 sheets phyllo dough
1-1/2 teaspoons melted unsalted butter
PROCEDURE
Apples
Peel, quarter and core apples. Cut quarters into 1/8-inch thick slices. In a bowl, toss with California raisins and lemon juice. Film a large frying pan with 1 tablespoon of butter over high heat; sauté apple-raisin mixture for about 10 minutes. Stir frequently. Halfway through, sprinkle with sugar and add rum. Keep sautéing until they are perfectly tender and deliciously flavored. Transfer to a platter and let cool.
Cinnamon Crisp
Combine flour, sugar, cinnamon and chilled butter in food processor with several on-off pulses, until mixture comes together. Refrigerate for 15 minutes. Then work that mixture through large holes of a cheese grater over a baking sheet lined with parchment paper. While mixture is dropping, move grater to cover baking sheet all over with those little dumplings. Refrigerate for 10 to 15 minutes.
To Assemble
Preheat oven to 375°F. Brush the phyllo sheets, one at a time, generously with melted butter and lay in a 9-inch buttered pie pan, letting excess dough hang over edge. Arrange sautéed apples in one layer. Fold excess dough over filling. Sprinkle with prepared cinnamon crisp. Bake at 375°F for 20 to 25 minutes. Topping will have browned lightly and phyllo will have turned into a golden color.

waldorf salad is a good one anytime.
slice and cube 4-5 of your favorite apples
1-11/2 cups mini marshmellows
1 cup raisins
2 stalks of celery diced
1/2 cup chopped walnuts
dressing
dressings is 2 cups sour cream and 1/2 cup sugar blended together.
chill and serve
