Hi all! I am wondering if anyone can tell me how to make the garlic "dip" that comes with the pita bread? I love it and would like to be able to make it at home.

Thanks!

It is NOT hummus...it's a garlic dip/spread. When I order my food at the restaurant they ask me if I want garlic and pita bread.

I know what hummus is and how to make it. I want to make the garlic dip. A friend told me that they use raw garlic, olice oil and ice to make it...

it's called aioli
it's so good don't listen to anyone else!

it's made by putting into a food processor about 2-3 heads of garlic and processing that until smooth. drizzle in olive oil like you would a mayonaise until it's thick. add a bit of lemon juice and salt to taste.

the true arabs like it this strong, but commercially they mix it with mayonaise to tame it down a bit. i like it strong but no one i speak to does (because of my breath!) :)

Are you talking about that tan grainy stuff? It's hummus, and is very easy to make if you have a blender or food processor. Drain a can of chick peas (garbanzo beans), and grind it up with a tablespoon or so of olive oil, a couple of cloves of garlic, a dollop of tahini (sesame seed paste), and sea salt and ground pepper to taste. Very simple and very tasty!

Hummus....if you go to some health food and ethnic stores, you can find ready-mix boxes of it, just add olive oil.
