I'm making a simple dinner for my mother tonight, and I'm wondering what goes well with chicken. Nothing too fancy, though because I don't have a whole lot of time or special ingredients. Thanks!

Bake the Chicken with a bit of butter and some lemon pepper seasoning for 35- 45 minuets at 350 farenheight.

Make some mashed potatoes with chives and sour cream

Pop open a can of Corn... Heat on the stove top

I have a chicken recipe I just love. I don't have portions or anything but prepare to your own taste.

You take chicken and cut it up into small strips and set aside. Then you take onions and cut them up into rings. Take a pan and pour in some olive oil, put the onions and chicken in the pan mix with probably a tablespoon of ginger, some salt, pepper, season salt, and some garlic if you like. Cook until done.

While your waiting on the chicken to get done boil a bag of brocolli florets until almost mushy or at least until it falls apart easily. Also, fix a cup or two of minute rice. When the brocolli and the rice is done mix together.

At this point you can either place rice mix on a plate and top with the chicken and onions for presentation or you can mix everything together for a one pot dish.

This is sooo good, it's even good leftover too. If your using lite olive oil this is really not a bad diet type dish and its enough that you don't need any side dishes to go with it! Lemme know if you try it.

You didn't say how you were preparing your chicken, or if there were dietary concerns, but it sounds like you want a plain old fashioned yummy chicken dinner. Here's an idea:

1. Roasted chicken with herbs: mix 1/2 tsp thyme, 1/2 tsp sage, 1tsp salt, 1/2 tsp fresh ground pepper with 1/2 cube butter. Rub the skin of the chicken generously with the herb mixture and put in oven. Place 1/2 cup white wine in pan, cover and bake for 50 minutes in a 350 degree oven. Take off cover and bake an additional 15 to 30 minutes, basting with wine and butter mixture. Let the skin get to be a nice golden brown. Remove from oven and let sit for 15 minutes before cutting.
2. Mashed potatoes: 4 - 6 yukon gold potatoes, 2 cups chicken broth, 1 tsp salt, 1/2 cup sour cream, 1/2 cube butter, 1/4 tsp garlic powder. Boile potatoes in chicken broth. Add water to cover the potatoes, sprinkle with salt. When potatoes are cooked thru, drain and return to pan. Mix in sour cream and butter. Add garlic powder, salt and pepper. Adjust seasonings to taste. Add more sour cream if mixture is too thick. For richer potatoes, add cream cheese as well.
3. Fresh green beans with bacon and onion: Steam fresh green beans until tender. Saute platter bacon, cut up into chunks, with diced onion until cooked. Toss green beans with bacon and onion. Season with salt and pepper
4. Angel food cake with strawberries and chocolate syrup.

For a simple dinner you could just make roast potato,pumpkin & roasted carrots with beans (blanch the beans first) then slow fry the beans of in butter & garlic.(if the butter is darker than a golden colour than your burning it & the beans wont have the same flavour) or you could just cook
apricot chicken with rice, fruit always taste's nice with chicken.

well you can make a lettuce and tomato salad for the vegetable and for the potatoes make baked potatoes ,serve on the side choice of sour cream ,butter and or melted cheese. or if potatoes are not your favorite make rice o roni chicken flavored.

make a baked chicken with baked potatoes, and scalloped corn. or fired chicken and mashed potatoes, and a veggie. or u could BBQ the chicken on the grill.

oh I would keep it simple

Broiled Chicken

Make soft tacos with regular taco fixings
You can use Low Carb Tortillas or just make it like a salad without the toritillas and use salsa as your dressing

mashed potaoes made with chicken broth instead of butter. and a nice tossed salad. maybe some strawberries with a low fat whipped topping for dessert
