For most corned beef, slow cooking in simmering water that you've seasoned with peppercorns or the seasoning packet if your corned beef had one is usually the best bet. Cooking it too fast or over too high a heat will toughen it.
If you've got a nice lean, tender piece of corned beef and want to take the chance, slather it with yellow mustard mixed with a little brown sugar, and grill it VERY slowly over a low flame. The idea is to form a crunchy crust on the outside while getting the meat to cook thoroughly.
It takes some practice, and you may have a failure or two if the corned beef was tough to begin with. But when you get it down pat (pardon the St. Patrick's day pun), a grilled corned beef is delicious!

I put it in a kettle, cover it with water, mix in the seasonings, and bring to a boil. Then I turn it down so that it remains at a slow boil, cover it, and let it cook for about 1 1/2 to 2 hours. I check the water often so that it doesn't get down too low. When its finished, I take it out and set it on a plate to cool a bit. I put baby red or yellow potatoes into the broth and turn up the heat. When the potatos are nearly cooked, I add baby carrots and cook until they are still firm. I remove the potatoes and carrots from the broth and put in a head of cabbage that I have quartered. I let the cabbage simmer until tender, then remove. Slice the corned beef and place on platter, put potatoes and carrots at one end and the cabbage at the other. Serve with whole grain mustard and crusty bread. Yum!

I'd have to say a slow cooker with just enough water to cover it. If you don't have a slow cooker, put it in a roaster and just cover with water, put the lid on and bake it in a 325 degree oven from early morning until dinner time. If you are home, check it to make sure is doesn't bake dry. About two hours before dinner, put some peeled white potatoes, some carrots and some wedges of cabbage in the top. It might only take about and hour for the veggies to cook if you are using the oven. I like a lot of pepper sprinkled on the cabbage. You could also use the stove top, too, on low heat.

its tough I cook mine all day

You could stew it with on oil onion,, sweet pepper, some black [pepper and eat it with bread for either breakfast or dinner.
You could cook it up with rice.
You could cook it up with pasta.

you could dunk it in batter and bake it or deep fry it, dont know what that would taste like though, i only ever add it to stews
