Corned beef takes at least 2 hours to cook. In a pressure cooker it takes 1 hour. Simmer for another hour.
This is from an example recipe.
Place meat in a deep stock pot or kettle; cover with water. Add bay leaf and peppercorns. Bring to a boil; skim off foam. Reduce heat, cover, and simmer for 3 hours. Add vegetables; simmer for about 45 minutes longer, or until vegetables and meat are tender.
Serve corned beef surrounded with vegetables.
THREE HOURS AND FORTY-FIVE MINUTES
45-60 minutes is much too short a cooking time.

OK, take a deep breath and a wee bit of the bottle. Now, put the corn beef at a slow simmer covered. this is the most imortant part. Keep the whiskey and beer flowing for at least another hour, better if longer. It's not a disaster luv, just a wee bit of a bother.
May you be dead half an hour before thee devil knows! An old Irish toast!

I could really eat some corned beef. I'm at work here on this St. Patrick's Day evening, and forgot my dinner.
Taste it. Does it taste fine? If it does, then eat it like that. If not... try to add some water... No, that probably won't work. Good luck anyway!

Corned beef is difficult to cook (as you now know.)
Maybe try shearing it into smaller slices or pieces, that way the rubbery texture will not be as evident.
If that doesn't work, just get everyone raging drunk before you serve the meal, and they'll never know the difference. :)

Either cut it very thin ACROSS the gram or grind it up and add onions potatoes and eggs and make corned beef hash

put it right back in the oven and keep cooking it until tender it might take a while. you can cook all night on 200 it really works
