I have some things in my pantry that I don't remember exactly when I bought them.

all cans these days have a date stamp! if yours dont, bin them!

The most important thing is how do the seams look. If the seams are in tack and the top and bottom are not compromised these canned foods can last a number of years.
As long as the can integrity is good.
Hopefully they were stored in a room that doesn't get to 90 degrees or higher. That can affect the product quality.

They found some canned goods that got lost on an expedition to antartica in 1912, this must have been in like 2005, anyway the food inside was still okay to eat.

Canned foods only go bad if they were broken, or bacteria got inside during the canning process. Look at the can carefully. It should be a perfect cylinder...straight all the way down. If it you see any bulges or large dents. Toss it. Otherwise the food inside will be perfectly safe to eat! A bulging can indicates bacterial growth inside...yuck.

there is a sell by date stamped on all canned goods, so the product is good at least until that date.

Canned goods are sterile, maybe 20 years or so.

Check the date. If it's passed, then trash it.
