Do they go home to their families on a rotating schedule? Like say, every six days or so?

It depends on the city. Some stations have volunteers only. That is often the case in very small towns. They stay at home, and when there is an alert they get a very loud noise on their telephone, like an alarm. My friend's husband is one and we were talking once when it went off. She explained it to me and said to just ignore it.
Other cities have firefighters that are paid. They may stay at the firehouse, but I do not think that they live there for an extended period. They may stay for a day or 2 and then be off for a day or for some hours. They do eat at the firehouse and sometimes sleep because they cannot just go out to lunch or home for dinner.
When I worked as a cashier the firefighters would come in and buy groceries. They always brought a firetruck in case they got a call. There were times when I was checking them out and they would get a call and just run out and leave their groceries. We would just put them in the cooler and keep them till they came back. They always came back and then would go back and cook their dinner.
