Which branch of science works to decode the molecules of a plant's aroma?

organic chemistry. Simple, i might add. Biochemistry deals with more complex stuff. Now, if you're interested in HOW the plant produces the molecule, that is biochemistry.

No branch of science has a monopoly on this. Biochemistry could be used, but so could organic chemistry, or even botonists who know some chemistry.
