I would buy fresh gurnard or cod (Use frozen if you have no fresh fish available). Wash thoroughly and pat dry ~ lightly brush with olive oil. Sprinkle finely chopped garlic and paprika over and wrap up with cling film ~ Put in fridge for about an hour to marinate. Brush the grill with a wee bit more olive oil and grill lightly for about 10minutes each side. Serve with a salad of fresh tomatoes, avocados and lettuce with herbs for garnish. Squeeze the juice of half a lemon on to each fillet,

Trout on the grill is simply delicious. Take trout fillets and lay on foil. Cover with slices of onion and a couple pats of butter. Sprinkle with a little garlic powder and onion powder. Close up foil and put on grill. About 20 minutes to steam the fish, check to see if done. This is a great way to grill trout.

Even people who don't like fish like this. Take chunks of cod (about 1 1/2 to 2 inches on a side) and wrap with 1/2 slice parcooked bacon. Marinate in BBQ sauce for about 1/2 hour or longer. Just put on coals and cook till done, you can tell by the fish turning white. Quick, easy, and good.

My aunt used to take the brook trout (any trout will do) my cousins would catch and do the following:
-after cleaning remove head and tail
-stuff cavity with butter, fresh garlic, fresh herbs (basil, dill, whatever sounds good and is fresh from the garden or farmers market) and lemon slices and juice.
The fish would be wrapped in the foil packet and put on the grill or frozen for the winter when they would be cooked in the oven. Tasty!

I make swordfish steaks on the grill in the packets i just sprinkle them with lemon pepper, rosemary, onion and garlic powder, and a couple of squeezes of lemon juice then put a lemon slice or 2 on top of the fish cool for about 20-25 minutes or until it flakes easily.

Salmon fillet rolled in cayenne pepper and brown sugar and placed in aluminum foil will give you a delicious healthy glazed fish dish.An alternative would be to just sprinkle the salmon with dries dill.Salmon is heart healthy due to high content of omega3 fatty acid.
