Some cookie doughs will last better overnight than others. Look for recipes that specifically ask to be stored in the fridge - if it can take 1/2 an hour or a couple of hours, it will be fine overnight. If the recipe doesn't mention it, the cookies may be fine to store overnight, but I've found that many of the doughs will end up making kind of flat cookies.
I would recommend something with plenty of fat in it for overnight storage - like sugar cookies, peanut butter cookies, etc. Chocolate chip and oatmeal don't work particularly well, as well as snickerdoodle.
Try the ones below, or look for "refrigerator cookies" or "ice box cookies" in your cookbooks or favorite recipe sites.

Yes, you most definitely can! I once knew an 87 year old woman that used a walker to get around, that made cookies...but it took her three days to make them! The first day she would make up the dough. The second day to cut them out, if they were shaped cookies, or drop them on cookie sheets. And the third day to bake them!!! It took a lot out of her to complete the task of baking cookies, but they were soooo delicious! She is gone from us now but, but I still think of her and how much effort and love she put into her cookies for all us kids in the neighborhood!!

Yes you can. Just make sure that you cover it. You can even freeze cookie dough and thaw it later to use :) Sounds like a great idea. Very nice of you!

Your best bet is to form it into a ball to keep the center moist, wrap it up in cling wrap and then put it in a baggie also.
Take it out when almost ready to use and let it get back to room temperature before making the cookies.
