My mom makes this white sauce that is just great.... She uses Butter, flour, Heavy Cream, and Parmesan Cheese, It is so good but so fattening you feel guilty. Does any one know a recipe for Alfredo Sauce, that is good and has less fat! I love to hear any recipes also if any one knows anything with Alfredo Sauce...

Substitute skim milk for the heavy cream.

Check www.CookingLight.com for other ways to lighten Alfredo sauce (cooking the flour in the oven to release the gluten).

this is ok but 4% cottage cheese might defeat the tendancey of this sauce to be a bit bitter...
1 cup 2% cottage cheese
1/4 cup fresh grated parmesan cheese (italian is best)
1/4 cup milk
1 egg
1/4 tsp nutmeg
1/4 tsp black pepper
1/2 cup chopped parsley or basil ( I prefer basil in summer but wintertime parsley is ok. again italian is better)

In a food processor, process cottage cheese until smooth. Add parmesan, milk, nutmeg and pepper; blend unntill smooth. Pour mixture into saucepan with hot cooked pasta (1/2 pound fettuccine or spagetti); cook over medium heat for 1 minute, stirring constantly. Sprinkle with parsley or basil. Serve immediately. Enjoy!
serves '4' (read 2 teen aged boys if there's plenty of bread of a family of three)

sorry hun but it doesnt work with fat free, skim, 1% or 2% milk. you cant make this recipe with these milks and it still taste the same or even look the same. you have to use whole milk or heavy cream. it wont even be a sauce just liquid. it's the fat content in the milk or cream that helps it to thicken. u can try it with these milks if u want but i'm telling u it wont be the same.
i suggest using less sauce or just use a healthy pasta with it like whole wheat pasta.

Low in Fat Alfredo

2 tbsp Olive oil
1 tsp Grated garlic(optional)
1 cup Parmesan cheese
3 tbsp Sour cream
1 cup Lowfat milk

Heat oil in sauce pan.Cook garlic in oil. Add cheese to oil and melt.
Stir sour cream into melted cheese.
Add milk slowly to sauce. Turn off heat when sauce begins to congeal.

Serve immediately.
