Sweetie,this is what i make for my sisters children repeatedly and they love it.I dont have time to make a roux,etc etc when i am babysitting so this is very simple.
Mac and Cheese
1/2 pound of macaroni(depending on how many you are feeding)
Velveeta cheese,cubed
Heavy cream,half and half,or milk
Salt and pepper
Cook your pasta to desired bite.Drain.In a bowl,or in the pan you are going to bake this in.Add,pasta,cubed cheese,salt and pepper to taste.Stir until cheese is distributed throughout the pasta.Add heavy cream,stir once more.Place in the oven at 350,covered.Just until the cheese melts.Yum.I also for myself like to add broccoli florets,cauliflower,or left over asparagus cut up.You could add pretty much anything to this,and it would taste good.It is a good idea to use up any leftovers.Meats,or vegetables and mix them in a few minutes before removing so they heat through.Also,the measurments can be changed according to your taste,it isnt rocket science its simply mac and cheese,it doesnt require exact measurments!

A really easy mac-n-cheese recipe we love is to get a box of the Kraft mac-n-cheese and cook it over the stove. Then, put the cooked macaroni into a shallow-ish dish that's oven-safe. Cook the mac-n-cheese in the oven at about 300 until the top is crispy. It's soooooo good!!!

Kraft Mac and Cheese
1 3oz package of cream cheese
1 6 oz can of tuna, drained
1 cup frozen peas
1 Tsp yellow mustard
Cook the M&C, add cream cheese, mustard, tuna, and peas. Heat thru. You can also bake this and add shredded cheddar cheese and bread crumbs on top.
Homemade Mac and Cheese:
1 box elbow macaroni, cooked and drained
1/2 cup butter
1/2 cup flour
1 4 oz pkg gorgonzolla cheese
1 8 oz pkg jack cheese
1 8oz pkg sharp cheddar cheese
1 3 oz pkg cream cheese
2 cups whole milk
Kosher Salt
Fresh ground pepper.
1/2 cup Italian Bread crumbs
1/2 cup grated Parmesan cheese
Melt butter and add flour. Stir until smooth and cook until lightly browned. Add milk. If mixture is too thick, add more milk to thin slightly. Cook until bubbly and thickened. Add cream cheese. Stir until smooth. Add remaining cheeses and stir until melted. Season with salt and pepper. Toss macaroni with sauce mix and place in buttered baking dish. Dot with butter. Top with bread crumbs and parmesan cheese. Bake at 350 degrees for 45 minutes, or until hot and bubbly.

Ive tried alot of recipes and my husband was quite picky about them. Believe it or not, the one that works best is the one on the back of muellers elbow pasta. Sometimes I add bacon bits to the recipe. I use sharp shredded cheddar , the orange kind. Its delicious. I think there is a little bit of mustard in the recipe, but I dont use it.

d-moon's recipe is right on target, but if you like a sweeter taste just add sweetened condensed evaporated milk, instead of the cream
