Actually tonsils can, and do, grow back. My mother got hers out as a young girl and they grew back a few years later.
I had my tonsils out when I was 19 and I was sore for months afterwards (mine was REALLY bad). I also had white in the back of my throat, it was just the skin healing.
It's possible you just have a sore throat or even an infection. If you are really concerned see a doctor! They are the ones who will be able to properly diagnose you. Good luck!
**Also, I had a really bad sore throat about a month ago and my doctor said it's basically impossible to get strep throat once you have had your tonsils removed. You probably just have a really bad sore throat (that's what I had).

Even though your tonsils have been removed, you can still get a sore throat. You could have strep throat, which is an infection, or sinus drainage which can often make the throat irritated. There are other causes that have nothing to do with the tonsils. It is extremely rare for tonsils to grow back. I would suggest, as I do with practically everyone with any kind of symptoms, to see their doctor. The people on here are helpful for the most part, but unless they are health care professionals, they're not qualified to diagnose or treat ailments. And that goes for me also. So see your doctor to get a proper diagnosis and treatment. Why suffer when help is available? Good luck!
