This menu was ment for mothers day but, since you are so thoughtful, I thought it would work well for you. I know I loved it when my daughter made it for me for my Birthday.
(hint; make just enough so you have no leftovers and your food costs wil not be too much)
You can probably make this meal fo under $ 20.00 for two.
Shrimp Cocktail Appetizer
Cold Poached Salmon
Tangy Mustard-Mayo Sauce
Tender Steamed Asparagus
Orange-Scented Couscous
Raspberry Granita, or dessert of your choice
Except for the couscous which takes only 10 minutes to make, this meal can be prepared earlier in the day, or as much as a day in advance and is simple but delicious and elegant. Allow 30 minutes to bring the foods up to room temperature before cooking the couscous and assembling the plates. She'll be so impressed!
Day Before (or earlier that day):
Poach the salmon
Steam the asparagus
Mix the mustard-mayonnaise sauce
Prepare the shrimp and cocktail sauce
Prepare the raspberry granita
That Day:
Cook the couscous about 30 minutes before serving (it only takes 5 minutes to make, but needs to rest for at least 5 minutes).
Set the foods out of the refrigerator to come to room temperature about 30 minutes before serving.
Scrape the granita into ice crystals for serving.

Student on a budget, well road kill pheasant sounds best. I've never had a good pheasnt in a restaraunt anyway, but my aunties cooking of pheasant was out of this world. She recommends 410 single ball shot gun, otherwise you get pellets in your meal, or road kill if you are not squeamish.
Trouble is you refer to mom so sound American. I don't think you get pheasant over there, but I found moose was brilliant when I lived in Canada. Only trouble was that we had to take it home in a helicopter.

ORK CHOP AND RICE CASSEROLE
2 tbsp. shortening
3/4 c. raw rice
1/2 c. sliced onion
1/4 c. chopped green pepper
6 pork chops
1 sm. can tomato sauce
2 cans water
1 tsp. salt
1/4 tsp. black pepper
1/4 tsp. sugar
Melt shortening in frying pan. Brown rice, onion and green pepper; remove from pan. Brown pork chops well on both sides. Drain fat from pan. Add rice, onions, pepper on top and around chops in pan. Combine remaining ingredients and pour over ingredients in pan. Cover and cook for 1/2 hour at 350 degrees, reducing heat to 325 degrees for additional 1/2 hour. If rice becomes too dry, add small amount of water as needed.

risotto, shrimp if you can afford it, chicken if not.
garlic bread on side, with a fresh, green salad with cherry tomatoes.
chop an onion and i clove garlic finely, and gently heat in butter till brown. add aborio rice with a veg/chicken stock cube and water. gently heat for 20 mins, taste till done. add a little cream if yiou want, you should have a little bite to the rice.
. if using shrimp add three/four mins before it's finished cooking and squeeze a little lemon in, don't overdo, taste till right.and if using chicken, cook in oven and add when cooked - looks good when displayed on top. to make chicken taste really good, marinate in lemon juice and coriander. mushrooms will go well with the chicken and with shrimp, chop up a little coriander.
stir in a little butter to rice at last min and jobs a good un.

Easy chicken stir fry
2 tsp. oil
1 lb. boneless skinless chicken breasts, cut into strips
3 cups frozen stir-fry vegetables, thawed
1/4 cup GOOD SEASONS Asian Sesame with Ginger Dressing
2 Tbsp. soy sauce
1 Tbsp. honey
1/4 cup chopped PLANTERS COCKTAIL Peanuts
4 cups hot cooked instant white rice
HEAT oil in large skillet on medium-high heat. Add chicken; cook and stir 7 min. or until no longer pink.
ADD vegetables, dressing, soy sauce and honey; mix well. Cook an additional 2 min. or until heated through. Sprinkle with peanuts.
SERVE over the rice.
parmesan garlic chicken
1/2 cup KRAFT 100% Grated Parmesan Cheese
1 env. GOOD SEASONS Italian Salad Dressing & Recipe Mix
1/2 tsp. garlic powder
6 boneless skinless chicken breast halves (2 lb.)
PREHEAT oven to 400°F. Mix cheese, salad dressing mix and garlic powder.
MOISTEN chicken with water; coat with cheese mixture. Place in shallow baking dish.
BAKE 20 to 25 min. or until chicken is cooked through (170°F).
Saucy Pasta
1 lb. extra lean ground beef
1 medium onion, chopped
3 cups rotini pasta, uncooked
3-1/2 cups water
1 jar (26 oz.) spaghetti sauce (about 3 cups)
1 cup sliced mushrooms
1 cup chopped red peppers
1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
BROWN meat large deep skillet; drain. Add onions; cook until tender.
ADD pasta, water and spaghetti sauce. Bring to boil; cover Reduce heat to low; simmer 15 min., stirring occasionally. Add mushrooms and red peppers; cook 5 min.
SPRINKLE with cheese.
