To thicken maple tree sap into maple syrup, basically you have to warm it to just below boiling. You are trying to remove the water, but not burn the natural sugar in the sap. The best way I have seen it done is to heat the sap over a medium flame in a stainless steel pot. Heat until small bubbles start to appear, and let the water steam off. It takes a while, but it is worth it.

Your other option is to heat the sap in a large cast iron pot over a fire until it bubbles, then let it cool. Or like most Canadian kids, pour it into a clean patch of snow, and eat it once it gets a little stiff, like taffy.

Hope this helps
