Cheese and Onion Enchiladas
1 Large Sweet Onion chopped
2 Package of Shredded Cheddar Cheese
1 Package of Flour or Corn Tortillas
1 16oz Can of red Enchilada sauce
1 8oz Sour Cream
Preheat Oven to 350 degrees
Take one baking dish, line with foil (shiny side up) and spray with non stick spray
Heat tortillas in microwave about 3 or 4 at a time to make them easy to manage. Then take each individual one and fill with shredded cheese, 1 tablespoon of chopped onion, wrap and place in dish with the fold on the bottom. After you have prepared all the enchiladas, combine the 1/2 the sour cream and the can of enchilada sauce in a bowl. Whisk the two together until creamy and cover the enchiladas in the baking dish with the mixture. Place in oven and bake for 50 minutes.
Serve with remaining sour cream, Spanish Rice, and a tossed salad. Enjoy!

pizza can be made with ready-made pizza dough at your local food store. Also, you could go to the nearest pizza shop and ask for some of their dough. Most are willing to sell you just that. Slow cooker meals are simple and very good. Stir Fries are also great especially if you just want veggies.

This is cooked all ay in the crock pot and is delicious. Fell free to omit those ingredients you do not like:
Carolina Barbequed Pork
2 onions, quartered
2 Tbsp brown sugar
1 Tbsp paprika
2 tsp salt
1/4 tsp ground black pepper
1 (4-6 lb) boneless pork butt; shoulder roasts work good too

4 tsp worcestershire sauce
1 1/2 tsp crushed red pepper flakes
1 1/2 tsp sugar
1/2 tsp dry mustard
1/2 tsp garlic salt
1/4 tsp cayenne pepper
Hamburger buns

Place onions in crock pot stoneware. combine brown sugar, paprika,
salt and pepper; rub over roast. Place roast on top of onion.
Combine vinegar, worcestershire sauce, red pepper flakes, sugar,
mustard, garlic salt and cayenne; stir to mix well. Drizzle about
1/3 vinegar mixture over roast; cover and refrigerate remaining
vinegar mixture. cover stoneware and cook on LOW for 10-12 hours or
on HIGH for 4-6 hours. Drizzle about 1/3 reserved vinegar mixture
over roast during last half hour of cooking. Remove meat and onions,
drain. Chop or shred meat and chop onions. Serve meat and onions on
buns. IF desired, top sandwiches with coleslaw. Pass remaining
vinegar mixture to drizzle over sandwiches.

Any roasting/ braising dish atkes a while and the flavours are 100% fantastic.
Beef Braised In Red Wine
2 tablespoons olive oil
1 (3- to 3 1/2-lb) boneless beef chuck roast
1 teaspoon salt
1/2 teaspoon black pepper
1/4 lb sliced pancetta, finely chopped
1 medium onion, finely chopped
1 medium carrot, finely chopped
2 celery ribs, finely chopped
4 garlic cloves, thinly sliced
4 (4- to 6-inch) sprigs fresh thyme
2 (6- to 8-inch) sprigs fresh rosemary
2 tablespoons tomato paste
2 cups Barolo or other full-bodied red wine such as Ripasso Valpolicella, Gigondas, or Côtes du Rhône
2 cups water
Special equipment: a 4 to 5 quart heavy ovenproof pot with lid
Accompaniment: creamy polenta
Put oven rack in middle position and preheat oven to 325°F.
Heat oil in pot over moderately high heat until hot but not smoking.
Meanwhile, pat meat dry and sprinkle with salt and pepper.
Brown meat in hot oil on all sides, about 10 minutes total. (If bottom of pot begins to scorch, lower heat to moderate.) Transfer to a plate using a fork and tongs.
Add pancetta to oil in pot and sauté over moderately high heat, stirring frequently, until browned and fat is rendered, about 3 minutes. Add onion, carrot, and celery and sauté, stirring occasionally, until vegetables are softened and golden brown, 10 to 12 minutes. Add garlic, thyme, and rosemary and sauté, stirring, until garlic begins to soften and turn golden, about 2 minutes. Stir in tomato paste and cook, stirring, 1 minute. Add wine and boil until liquid is reduced by about half, about 5 minutes. Add water and bring to a simmer, then return meat along with any juices accumulated on plate to pot. Cover pot with lid and transfer to oven. Braise until meat is very tender, 2 1/2 to 3 hours.
Transfer meat to a cutting board. Skim fat from surface of sauce and discard along with herb stems. Boil sauce until reduced by about one third, about 5 minutes, then season with salt. Cut meat across the grain into 1/2-inch-thick slices and return to sauce.
