If you would like something off the beaten path, and don't mind delving back to medieval times, you should investigate the "Cantigas de Santa Maria." This is a set of more than 400 religious songs in praise of the Virgin Mary, which were collected around 1250-1280 AD in Spain during the reign of King Alfonso El Sabio ("The Wise"). They possess a radiant beauty and spirituality, and could form the basis of a truly unique recital.

Ave Maria by Franz Shubert

Wonderful recital piece - does well with guitar, pianoforte, harp, small ensemble or full orchestra accompaniment.

Now be careful - this has been hacked to death by everyone including a VERY, very rare recording of Alessandro Moreschi, the last known castrato singer. So the challenge will be to perform it with a fresh outlook.

MY GOD YES!!! If you hopen any (Catholic) hymnal and look for Mary, you're bound to find something that came from something similar to those...
Also, G. Schirmer publishes a volume called something like Sacred Araias, you may try that too...
