I am making skillet lasgna tonight for dinner, and I dont know what to serve with it besides italian bread? any ideas? Thanks

Salad is a good idea but I also like a green vegetable sauted in garlic and olive oil such as brocoli rabe, escarole or spinach.

It's still Italian, still green, still healthy, and a hot side dish just seems to go with the warm comfort food of lasagna better than a cold salad.

Sweetie,there are so many things that go wonderful aside lasagna.Here are a couple recipes.

Oven Roasted Asparagus(My favorite with or without the lasagna)
One pound fresh asparagus(not the canned stuff as they are mushy.They cook them way too long).
2 or 3 tablespoons of extra virgin olive oil
Salt and pepper
Any other seasonings you wish(e.g. Garlic,onion powder etc)

Clean your asparagus as normal removing the tough ends.Basicly,hold on end bend the other,and where it breaks is where you will cut the others.Lay it down aside them and cut the bunch at that same spot.Lay asparagus on a cookie sheet,drizzle with extra virgin olive oil,and season with salt and pepper generously.Toss to coat with oil and place in an oven at 350.Cook until tender,dont let them go too far.You want them to hold their shape,but just be tender,not mushy.

Another side dish,would be a basic salad?
This is my favorite salad.

2 handfulls of baby spinach
2 handfulls of iceburg lettuce
2 handfulls of grape tomatoes
You can add anything wish to this salad(e.g. carrots shredded,cheese of your choice etc)
2 handfulls of croutons
Your choice of dressing or whichever dressing you have on hand.I like a homemade vinagrette in this particular salad.Then top if off with the croutons and toss just before serving.Add the dressing just before serving or,allow them to dress the salad individually so you can keep the leftovers and they wont wilt.

Sauteed Green beans
One pound fresh green beans(You can use canned if that is what you have on hand)
2 tablespoons butter
Salt and pepper
1 garlic clove minced finely.

If you are using canned you skip this step.In a shallow pan bring 2-3 inches of water to a boil.Drop green beans in water for 3 minutes.(You can cook them fully if you prefer i tend to like this particular method,and leaving them with a bit of a crunch)While those are in the water,melt butter in a pan,and add garlic.Allow the raw garlic flavor to cook off,a couple minutes.Transfer the green beans into the butter and garlic and toss.Allow them to cook for 4-5 minutes so that the green beans pick up the flavor.Salt and pepper to taste,and toss.Serve.

You don't really need a side with lasagna. But a nice salad if anything would go well....

salad - red onion,spring onion and tomato with a sprinkle of bazil drenched in balsamic vinegar and olive oil and heaps of salt and pepper
