-Take him to the vet for an exam every 6 months, even if he isn't due for any vaccines. The physical exam is the most important part.
-Monitor for excessive drinking, as this can be a sign of kidney problems or diabetes
-Feed him a high quality (not store brand) diet for kitties over 7 years old.
-Maintain a healthy weight. If he is overweight, you should get home to lose weight by decreasing his food and increasing his exercise. If he ever seems like he is losing weight to you for no reason (not on a diet), get him checked immediately. This can be a sign of kidney disease, and if you catch it early, there are many things you can do to improve the quality and length of his life.
Other than that, just keep on doing what you've been doing! Contrary to popular belief, 8 isn't really *that* old considering that cats usually live to be about 15. I mean, he's no spring chicken, but he still has many happy years ahead of him.

Things to watch with an older pet:
# increased thirst/drinking
# weight loss, especially with increased appetite
# dental pain (watch when he's eating)
Precautions:
# 6 monthly checks (or at least yearly) with a vet
# feed senior cat food (preferably not a commercial brand)
Vets can do simple, in-house blood tests which quickly diagnose common problems in older cats (kidney/liver probs, diabetes).
Many older cats need dental work, as would you if you hadn't brushed for 8 years, hee hee. He may not if you've always fed dry food tho.
Otherwise keep up the good work, hopefully your cat is only halfway through his life!
