wrap the brisket in tin foil tightly with maybe a smear of mustard or horseraddish over the top of the beef, and then roast on a low oven gas mark 2 150c0r 300f for at least 4 hrs.

because the use of the bag becomes moot. You may as well just cook it in the oven.

The bag becomes so big that the abillity to trap the heat and moisture becomes redundant as it will remain above the food you are attempting to cook with heat and a little mild pressure, and moisture.

Has nothing to do with damge to your food.

maybe cos its a waste of oven bag? what do you use an oven bag for? and you could put a four pound beef thingy in a dish in the middle shelf of the oven...no need for oven bags, whatever they are...

Im sure they have a good reason. although i can,t think of one.
but dont despair just take your handy dandy scissors and cut it down to size! from the open end of course.

brisket is usually cooked in liquid slowly otherwise it's tough
