In my area, pawn shops are required to give serial numbers and descriptions to the Police on a regular basis of items them have purchased.
Stolen items where a serial number was given by the victim is entered in NCIC. The pawn shops lists are crss checked in the same system.

The police CAN search shops in other counties, but the chances are slim that they actually will.
In my state, pawn shops send notices to the law enforcement agency of jurisdiction where the subject who pawns items lives. So, if my neighbor goes to the next town over to pawn an item, that pawn shop will send a copy of the slip to my local police department.

normally they don't "search" pawnshops, what they do is merely send them sheets with lists of stolen property, the pawn shop is suppose to report anything stolen they find.
But you will have either honest pawn shops or dishonest ones, the honest ones would report things they find, the others if there is no serial number merely swear they had it long before the stolen date and it can't be that item.
But the police don't actually go in and go though the places.

Police typically send a "stolen property" notice to local pawn shops... but they don't usually spend a lot of time searching for stolen property, unless it's something easily visible... like a car.

ABsoutly honey, they search, every where, But see they haved to search your house , even though you say your stuff has been stolen, sometimes, the item does show up eventually and then there is no crime commited, because you accidently misplaced some something, then they go and search other places like cars , and stuff, They are detective police, a regular police officer will advise you who is the best to call

To answer the question, 'police could', but in reality won't.
Your recourse is to hire someone to do the legwork or go
walk yourself in and out of pawnshops. The average thief
hopes you won't make any effort and figures only on police
getting tip from somebody 'ratting out' for a plea bargain.

I'm sorry but the police won't waste their time doing that. My in-laws jewelry store was robbed of over 700,000 worth of jewelry you know they won't see that stuff again. It'll have to fall on a policeman's lap to get your stuff back.
