I'm just about to cook Palak Murgh ( chicken with spinach), which is difficult but delightful.

Keep on with the curries, you will have a rich culinary experience! Try Rogan Josh; Pasanda and Bhuna, and eat red meat curries as well as chicken. Side dishes such as onion and mushroom bhajis are magnificent. Vegetable curries are good as well, especially dahl, that is made from lentils.

When you are bit more experience, try Methi Gosht. The subtlety of the spicing in this king of dishes will blow your taste buds.

I remember my first curry well. Funnily enough, I was 25, and I wanted to take a girl on our first date to an impressive restaurant. Where I lived, we had 4 Indian restaurants, 2 Chinese and an Italian, but no English restaurant, other than pubs. A friend advised me what to order.

Suffice to say that I was so taken with the food that, in the course of the next year, I ate my way through the entire menu. I then went on to take a special course in what is known as prasad cookery (I was already a trained chef, but not in Indian/Pakistani food). This was 25 years ago, but I cook all the Asian and Persian styles of cookery, and I would say that the cuisine of the Indian sub-continent rivals that of France.

A few tips - if you are unsure of whether you will like a particular dish, ask the waiter. They are very keen on their food (Indian/Pakistani restaurants generally pride themselves on their food and ambience) They are also very astute business people - a satisfied customer is a returning customer. If you decide to try cooking Indian food for yourself, buy a good cookbook (look for Hussein and/or Fernandez) and start with Balti-style cooking. You will need a good wok for this. Don't buy curry pastes or jars of curry sauce-they are an industrialised gloop that bears no relevance whatsoever to spices that you prepare yourself. Rajah, TRS and Natco are all reliable sources of the seeds, herbs and spices you will need.

Bon appetit.
